L’gastronomic publishing exists and resists, after a 2020 that has put a strain on the catering sector and awakened interest in home cooking. In the black year of commerce, amid closures and regulatory restrictions that have marked over 40 billion euros in losses for the sector (according to a Coldiretti report on food consumption), people have invested food with a consolatory role (this is the so-called “emotional eating”, Also known as nervous hunger: eating, that is, to compensate for a negative emotion) and also rediscovered the pleasure – not to call it urgency – of cooking within the walls of the house.
The boom in recipe sites reflected this address, which had the virtuous consequence of that of waste reduction (reached, in Italy, 222 thousand tons of food saved in just 12 months): we have all been hungrier, in short, and more thrifty.
The Italians, in particular, they were among the largest recipe experimenters (according to the report EIT Food dell’European Institute of Innovation & Technology last December) with an important consumption of flour and fruit and vegetables, especially vegetables, to the detriment of ready-made foods and prepackaged dishes
To triumph, during and beyond the quarantine period, were the starchy – of all shapes: from bread to focaccia up to the classic pan pizza -, together with breakfast sweets – above all plumcakes and croissants – or the inevitable cornerstones of grandmothers cooking, like potato gnocchi.
And the desire to express oneself in the kitchen shows no sign of fading in this 2021 still short of breath, equally hungry for flavors and culinary knowledge: among the themes already in trending topic there are fermented foods and bartending.
