Born in SP, Sushi Vaz brings his unmissable omakase to Leblon

Almost without fanfare, especially because it only accommodates 12 customers at a time, which Sushi Vaz Arrived to Leblon . The house born in São Paulo set up its Rio branch in a Lilliputian property on Rua Rita Ludolf, close to Ataufo de Paiva.

The person who calls the shots here is the friendly Cuiabano Wdson Vaz an authority among new generation sushi chefs. Only under reservation he and his team serve there a tasting menu focused on traditional Japanese cuisine that has become popular with many foodies paulistanos.

There are 16 stages (R$ 450) with the best of the world of fish and seafood available on the day, in a course that lasts two hours and is accompanied by a delicious soundtrack that echoes Cartola, João Gilberto, Toquinho…

During the visit, some highlights were the sole usuzukuri with grated bottarga on top; the selection of tuna sashimi (national and Spanish bluefin) and the snapper with fleur de sel, which is sprinkled with yuzu.

Hope the surprising mini octopus with sesame oil, soft crab tempura and scallop sushi with salmon roe also appear on the day.

To drink, there's nothing better than a good sake, like the Japanese Sake Hakutsuru (R$ 40 per dose) and Niwa no Uguisi Junmai (R$ 280 per bottle).
