Brota, a great vegetarian by chef Roberta Ciasca, is reborn in a century-old mansion in Rio de Janeiro

the great vegetarian restaurant chef’s signature kitchen Roberta Ciasca she has a new house — and what a house, by the way! After working in the collaborative space Be+Co and acting only as a delivery service for a while, the sprouts reborn in one of those historic centenary mansions of Botafogo.

With high ceilings, large windows and a garden, the restaurant opened in July on Rua Conde de Irajá thus becomes one of the attractions of Reduto — a multiple space known for its artistic and festive effervescence.

From nibbles to dishes, Brota’s kitchen invites you to share suggestions at the center of the table and taste several flavors in a single visit. Don’t miss, for example, the creamy baroa potato and green bean fritters with Indian seasoning enhanced by tamarind chutney (R$24; two pieces).

Another attraction, this one inspired by Tex-Mex, is the vegan chilli (R$34). Tasty and spicy enough, it is prepared with red beans, sour cream and tomato salsa. Comes with homemade corn tortillas.

As can be seen, chef Roberta Ciasca is an expert in those recipes she embraces, such as the creamy polenta with Creole cornmeal and parmesan (R$ 45). With a sandy texture, it arrives at the table covered with grilled zucchini sticks, leeks, pieces of cashew nuts and a touch of pesto.

Also in this line of comfort food is the vegetable curry garnished with basmati rice and a bread farofinha with sesame seeds (R$68).

To sip, there is a small selection of natural and organic wines and another of signature drinks, which includes nº 03 (R$ 32), which combines vodka infused with cardamom, cucumber juice, mint and sparkling water.
