Campo Grande has a gastronomic festival with regional creations curated by chef Paulo Machado

Campo Grande, MS) performs until the 7th of May the 1st Gastronomic Circuit CG festival dedicated to regional gastronomy with special dishes created by 68 local restaurants.

Curated by Chef Paulo Machado born in the capital of Mato Grosso do Sul and defender of Pantanal food, the festival proposes that the registered houses create dishes with regional products, such as baru, pequi, guavira, country chicken, sun-dried meat, mocotó, painted, pacu, betrayed, cassava, among others.

You creation values ​​are in the range of R$ 20 to R$ 64 and change according to the category of the establishment. The Restaurant category has dishes between R$50 and R$64; hamburgers from R$30 to R$35; coffee shops range from R$20 to R$25.

To participate in the festival, just go to one of the participating establishments and order the creation dish. According to the guidelines, restaurants must develop a dish with at least one of the regional ingredients listed, which will later be included in the fixed menu of the business.

Under the motto “Sabores da Terra”, the Gastronomic Circuit aims to promote regional gastronomy to strengthen the identity of Mato Grosso do Sul.

Curatorship

Chef Paulo Machado was responsible for selecting the regional ingredients to be used in the creations, in which the intention was to solidify the “zero kilometer” concept in the food and beverage sector of the state capital.

“The municipal market is our greatest treasure, and my source of inspiration for the Circuit. From there come: sausage from Maracaju, Nicola cheese, cumbaru, rapadura, coriander, pequi, soleada meat… the boss.

With this, Machado also aims to generate income for local producers.
