O 12th best restaurant in the world, according to The World's 50 BestA Casa do Porco, led by Janaína Torres and Jefferson Rueda welcomes Spanish chefs for a dinner in which Brazilian and Spanish techniques and flavors mix, with pork, of course, being the protagonist.
The event Pork Mundi It is now in its eighth edition and aims to promote exchanges between chefs from all over the world, aiming to show and promote the versatility and deliciousness of pork, which is incorporated into the culture of other countries through gastronomy.
With limited tickets for the public at a cost of R$1,000 per person, next Wednesday (24), the popular restaurant in the Center of SP will be transformed into a kind of gastronomic embassy of Spain with five chefs representing the honored country.
Janaína and Jefferson welcome Diego Guerrero (DSTAgE), Juanjo López (La Tasquita de Enfrente), Paco Méndez (Come) and Vicky Sevilla (Arrels) and each chef will sign a recipe. Composed of four starters, a main course and two desserts, the menu includes dishes such as garlic soup with jamon broth, pork jowl and egg, celery flan with Galmesán cheese and pork and corn broth with chocolate, dulce de leche and Crackling.
According to Jefferson Rueda, the idea of Porco Mundi is to investigate the cultural, economic and social importance of pork for the different peoples of the world and how they use this protein for food. “In addition, of course, to exchanging knowledge with our professional colleagues, socializing and providing a unique experience for our customers”, he explains.
For Janaína Torres, Porco Mundi Espanha has a special taste. “It’s an event that will tell a little about my ancestral past. I was raised by my grandmother, who was born in Granada, so I return to my Spanish roots in a Porco Mundi that will be part of my story.”
