Chef Patricia Helú inaugurates a vegetarian house in São Paulo, open without interruption from breakfast to dinner

Beside her is Thainá Andrade , partner and chef who runs the day-to-day kitchen at Caracolla, has worked in several professional kitchens (among them DOM, Dalva e Dito, Riviera and Casa Raw), specializing in restaurant management. Enthusiast of light, healthy recipes that explore the full potential of plant ingredients, she comments “I found meaning in gastronomy when I understood that it can offer much more than just a tasty dish”.

The space is open from 8 am and is a real invitation to start the day calmly, in the bright environment and with decoration that takes us to a beach far away from the chaos, with plants and many straw elements. On the menu, items such as Pão de queijo (R$10.80), made with Minas flour, Canasta cheese and parmesan crust, Vegan cheese bread (R$10.80), which uses vegan parmesan, and Chipa de goat cheese (R$11.80). Other options are the Egg Sandwich (R$32.80), a sandwich made with artisanal brioche bread with organic eggs and house mayonnaise, and the Mediterranean Pie (R$52.80), with feta cheese, pumpkin and arugula, served with a mix of sheets.

To drink, there are lattes (all prepared with A Tal da Castanha vegetable milk), such as the Matchá Latte (R$16.80), made with matchá, honey and vegetable milk, and the Chai Latte (R$16.80), which spices, coconut sugar, vegetable milk. There is strained coffee (R$7.80) and espresso (R$7.80), as well as teas from the Talchá brand, in versions such as Cocoa & almond (R$12.80), Ginger, mint, lemon (R$12.80) and Matchá (R$16.80).

The menu of quick snacks and coffee is served throughout the day, which also makes it a good choice for a break during the afternoon accompanied by the cornmeal cake (R$16.80) which can be served with creamy guava (R$ $5.80), and the Chocolate Cake (R$16.80), a very fluffy and wet vegan recipe, which goes well with the Chestnut Brigadeiro (R$5.80) or Sweet Delight Caracolla (R$5.80), this made with cashew nuts, coconut sugar, vanilla and a pinch of salt. Appeltaart (R$32.80) is a recipe inspired by the famous Dutch apple pie.

Incidentally, many menu items were inspired by the chef’s travels around the world. For lunch and dinner, servers from 12:00 to 15:00 and from 17:00 to 22:00, vegetables are the protagonists without falling into sameness.

For example, the Tartar Caracolla (R$52.80) is unmissable, very light and full of flavor and texture, it is made with smoked carrots, grain mustard, fresh herbs and a spicy touch and is accompanied by slices of naturally fermented bread and salad. Ideal for sharing, the Boursin & Pomodoro (R$52.80) consists of a generous piece of baked boursin cheese on a fresh tomato sauce with basil ─ served with slices of naturally fermented bread or the pretend crab shell (R$ $32) with vegetables and a touch of coconut milk and pepper is again an invitation to close your eyes and travel to the seaside.

As a main course, the quibe na curd (R$56.80), inspired by the chef’s family recipe that has Lebanese roots, is made with quinoa, pumpkin and very well seasoned ─ stuffed with caramelized onions and served over chestnut curd. The Root Gnocchi (R$62.80) is a surprising vegan dish: flourless, made with roasted roots, stuffed with homemade ricotta, grilled in macadamia butter and mounted on a light layer of white sauce. Finally, the customer can choose between grana padano cheese or vegan parmesan.

Still among the dishes, there is the “Risotto” with pomodoro and basil (R$62.80) which, despite the name, does not use rice in the preparation. Very light, it is made with finely chopped cauliflower, homemade tomato sauce, pesto and house chévre ─ pine nuts and wild arugula are used to finish – and Vegetables in a very spicy yellow curry with coconut milk and tofu (R$ 52.80 ).

Among the desserts, be sure to order the Torta Caracolla with chocolate, homemade dulce de leche made with cashew nuts and fleur de sel (R$36.80).

To toast life, in addition to a selection of five wines by the glass, kept in a wine dispenser in the lounge, there is a drinks menu signed by the renowned bartender Fabio La Pietra . In addition to classic cocktails, the menu has authorial recipes such as the Caracolla punch (R$44.80), with a light alcohol content, very citrusy and perfumed with spices, it combines vodka, Lillet, guava and citrus fruits. The Bitter giuseppe (R$42.80) is prepared with Cynar, red vermouth, Sicilian lemon and orange bitters, the Penicillin (R$42.80) in the house’s reinterpretation, mixes scotch whiskey, Brazilian honey, ginger, citrus fruits and single malt smoked and the Clericot version (R$38), served by the glass, with white wine, blueberry, green apple, orange and cordial.
