A 2021 edition of Chocolate Week starts this Thursday, November 4th, and promises to leave São Paulo a little sweeter – but with a conscience. In all, 19 establishments, including sweets, cafes and artisan bakeries awarded by the São Paulo capital, feature exclusive desserts ranging between R$ 5.50 and R$ 130.
The sweets range from brigadeiros and brownies, to pies, croissants and breads, and even gelatos. The products will be available for face-to-face consumption in stores, e-commerce and delivery. Thus, until November 14th, the Brazilian public will be able to become one of the first in the world to taste the novelty WholeFruit Evocao™.
In this year’s edition, the chefs have the mission to incorporate it into their recipes. Part of a new category of chocolates made from 100% pure cocoa fruit, it has no added ingredients: it contains no sugar from other plants, no vanilla, preservatives and emulsifiers.
WholeFruit Evocao™ has 40% less sugar than most dark and milk chocolates, as its sweetness comes from the fructose present in the cocoa pulp. Its flavor has an acidity and freshness characteristic of fresh fruit and is connected with principles of sustainability, as it reduces fruit waste by 25% and provides farmers with additional income.
Participating houses
The houses and brands that are part of the festival and took on the challenge of testing the innovation are: 89ºC Coffee Station, A Fornada, Beaubon, Beth Bakery, Casa Santa Luzia, Casarìa, Cau Chocolates, Confeitaria Marilia Zylbersztajn, Dalva e Dito, Sorvete School , We Make Bread, La Boulange, Le Blé House of Bread, Master of the Brigadeiros, Padoca do Maní, PikurruchA’S, Renata Arassiro Chocolates, Vapiano and Zestzing Artisanal Bakery.
All feature an exclusive dessert within the theme of the edition, with the exception of Casa Santa Luzia and O Mestre dos Brigadeiros, which have two recipes each – the first sells a WholeFruit vegan chocolate tart and yellow fruits and a creamy Evocao chocolate cake with macadamia nuts ; the second produces brigadeiro WholeFruit and Brownie WholeFruit.
At the event, inspired by the search for a conscious confectionery based on sustainability, a percentage of sales will be reverted to cocoa seedlings, donated to projects linked to the sustainable cultivation of the plant in Bahia.
The projects are supported by Barry Callebaut, a world manufacturer of chocolate and cocoa products that has held the event in the country since 2016.
