Concorrido Ama.zo Peruano opens new unit in Higienópolis

The kitchen of Ama.zo, commanded by chef Enrique Paredes 🇧🇷 quickly conquered fans all over the city who faced queues to taste its potent Peruvian food, full of spices, flavors and textures. It is no coincidence that the restaurant is the only Peruvian restaurant in Brazil with a Bib Gourmand nomination in the Michelin guide 🇧🇷

With such success, it was inevitable to look for a new spot to offer their creative dishes. The task of finding a new location was not easy, as the first branch, in the center of São Paulo, is located in a historic mansion, with abundant vegetation and an environment that makes us forget that we are right in the center of one of the busiest cities in the world.

Therefore, the new place was handpicked: the external area of ​​the Shopping Patio Higienópolis 🇧🇷 With a beautiful hall and, of course, an outdoor terrace, the decor was carefully thought out to offer the neighborhood a faithful branch. The house will be open to the public from Saturday (December 10).

The Higienópolis branch will have – soon – a special menu for the afternoon , which will work between lunch and dinner. “It will be a surprise for the public, as we will also bring Peruvian recipes for this afternoon coffee moment”, explains the chef.

For lunch and dinner, diners have at their disposal exactly the same menu as in the main house, with ingredients that show the intersection of Peru and Brazil: cassava, ants, aromatic peppers, tucupi, cocoa and aguaymanto (physalis), but also pumpkin, rapadura, red pepper, persimmon, guava and cupuaçu. Ceviches, causa, tiraditos, chicharrones and assorted rices. Inputs common to both or purely Brazilian toning up classics of Peruvian cuisine.

In other words, from Patacones (banana tostadas, cassava “crushed”, shredded lizard and coriander sauce, R$35) to Arroz con Conchas (sweet rice with plated scallops, ají amarillo shaving and finger emulsion for a girl, R$85), including Tacos Acebichados (crispy corn tortillas, Nikkei fish tartare and avocado mousse, R$52), Causa Limeña (purple mashed potato, smoked shrimp tartare, black tucupi acebichada emulsion and rocoto, BRL 62) and Cebiche Mixto (Catch of the day, scallops, octopus and shrimp, Brazilian pepper sauce and coriander oil, R$75). All printed in colors and intensities with each dish.

Enrinque, from Lima, still balances the Creole, Nikkei and Chifa legacy from Peru with French, Japanese and Italian techniques. It can be packed with festive drinks, like the Ama.zo gin and tonics (with physalis syrup, lemons and smoked cinnamon, R$38) or Floresta (with herb shurb, Sicilian lemon, purple basil and shavings of puxuri, R$38) . Needless to say, the whole party of colors and textures are in the desserts like Suspiro Limeño (traditional Peruvian dulce de leche, sigh with quinoa and togarashi, praline and seasonal fruit ice cream, R$36) or Crema Volteada ( cocoa milk and honey pudding, cupuaçu crème anglaise, chestnut craquelin and jabuticaba ice cream, R$38).
