Csaba dalla Zorza: how to make bread (and be happy)

This is not your usual bread book. “It is not a book for the mother’s buffs or for those who want to leaven 36 hours: it’s a book for people like me who work full time, who does not want to eat industrial bread, pizza and sweets but also does not want to take four hours off to make a cake. It is a practical book ».

Csaba dalla Zorza is back in bookstores and now also on TV with her new one libro The Modern Baker it’s a broadcast on Food Network broadcast every Sunday at 3.00 pm from November 21st. Everyone started baking during the lockdown, then stopped as soon as it was back to normal. Not Csaba, who had started well before but went to do an internship with Davide Longoni, guru of Milanese mother yeast, and decided to put together a book of modern recipes, suitable for everyday life and for those who like her time it has very little of it.

Few flours and few ingredients for cooking such as heavy metal, or the New Year’s waltz

Homemade recipes, simple, which start from 9 bases to “play” a very vast repertoire, from sweet to savory, as if they were musical notes. «All music, from heavy metal to the New Year’s concert, is made from 7 notes. I apply the same thing to baking: few flours, few ingredients (those found in the supermarket), with which you can make many preparations. You just have to learn to mix them together ».

350 pages of recipes, from pastry al beetroot bread, layer cake and savory waffles to make peace with carbohydrates. They range from the single-portion sandwich for elegant dinners to a New York babka trendy but it takes three days to do it and the sweet and savory pies that you reheat are better than at the moment and therefore can be done sooner. Modern solutions and unconventional recipes.

The short time of grandmothers and women

«It wasn’t that grandmothers had that much more time than us. Maybe they didn’t go to the office but ran the house, washed by hand, looked after 7 children, they didn’t shop online and they didn’t have an App for everything. Today we have much more help than women did until just 50 years ago. To say they had more time to cook and we didn’t is an excuse.

The real empowerment that burned the bra first and then the apron is not non-cooking, but no longer be a slave to the kitchen. In the seventies they made us a false promise, they made us believe that to be successful in life as a man we had to resort to the industrial product that passes from the freezer to the microwave ». And history has shown us that it was absolutely not true.
