Dalva e Dito, by Alex Atala, prepares a Finnish dinner to celebrate 15 years

As part of the celebrations of its 15th anniversary, the restaurant Dalva and Dito in Jardins, prepares this Saturday (28) a exclusive dinner inspired by Finnish cuisine .

For the occasion, the chefs Alex Atala and Netto Moreira welcome the chef Stefan Weitbrecht son of a Finnish mother behind Cozinha 212 and the Atlântico 212 bar, both also in the capital of São Paulo.

“In the summer, we smoked outdoors around the lakes to cook what we caught or collected in the forests,” says Stefan, who spent annual holidays at his grandparents’ house in the Nordic country.

The menu

For dinner, Stefan designed a five-course menu (R$ 250 per person, with drinks and service separately) that highlights the traditions of the Scandinavian country, which is based on smoking and curing and whose main ingredients are tubers. , seasonal fruits, wild mushrooms, game meat and fish.

Appetizers include cured fish tostada, open-faced shrimp sandwich, salmon and dill soup and even homemade aquavit, a traditional Scandinavian distillate.

Poultry, fish and game meat appear, respectively, in recipes such as smoked chicken wings stuffed with mushrooms, grilled fish with carrot puree and salmon roe and Denver cut with beetroot and horseradish. To top it off, the chef presents a blueberry tartelette.

Two cocktails were also created for the night: the Dirty Beet, which features vodka with beetroot, gin, dry vermouth and honey vinegar; and Essências da Horta, with gin, green apple, lavender syrup and lemongrass.

15 years of Dalva and Dito

This Saturday’s dinner (28) marks the second stage of the celebration of 15 years of Dalva e Dito, a Brazilian cuisine restaurant run by Alex Atala that opened its doors in 2009. The idea is to showcase the mosaic of nationalities that made up the gastronomic scene, social and cultural context of São Paulo over decades of immigration.

The project kicked off at the beginning of August, with a dinner based on Armenian cuisine. In the coming months, the address should also bring to the table some of the gastronomy of Haiti, Senegal and Paraguay.
