Emma Marrone’s meatloaf recipe (exclusively for Vanity Fair)

On the stage of Vanity Fair Stories, Emma Marrone told a lot. She is direct, without discounts, even towards herself. So much so as to make fun of himself «but is it possible that with 8 billion inhabitants on earth there isn’t one who is my boyfriend?», or to tell that he would sign up for Tinder, «I’d love to», and that his description on the dating app could be: «dominatrix, I cook well and iron my underwear». Perfect, right?

And if romanticism has forgotten him, he says, after so many years without a serious relationship, he would certainly take care to wait at home for his future love by cooking something good. His strong point? The meatloaf, which happens to be superb. And of which he gave the recipe to the public. “It will be the highest moment of the Stories,” she joked from the stage. But the editorial staff of Vanity Food thanks: even this moment, and this recipe, have become part of this large family that has been meeting for 5 years every end of November in Milan for our festival. Emma’s meatloaf, the recipe

«He takes the minced meat, half beef and half pork. And then eggs, breadcrumbs, salt, pepper, nutmeg, parsley, minced garlic without core. And then cheese: there is the theory of Toscanello and that of Pecorino, but I prefer the Parmesan which is lighter. A drop of milk and then knead. The secret is in the dough, you have to break the muscle fibers of the meat: knead, knead, knead…and then with this dough you either make meatballs that you fry, put in and take out, or spread out with a rolling pin and stuffed with whatever you prefer, it becomes meatloaf». Easy isn’t it? \
