Event brings great names of Latin American cocktails to São Paulo

Important names in Latin American cocktails arrive at SubAstor to participate in the fifth edition of the The Mission.

This time, with the theme “LATAM”, the project led by Alex Sepulcher and Fabio La Pietra, receive Georgina Barbachano GarciaGina, and Luis Allan Suarez Lopezboth from the Mexican Hanky ​​Panky, 12th in the The World’s 50 Best Bars, and Esteban Varelafrom Tres Monos, an Argentine bar that occupies the 33rd place in the important ranking.

The event takes place between the 4th and 6th of May. Unlike in previous years, the trio, instead of traveling to other states to explore the country’s biomes, now visits small producers in and around São Paulo who work with products from the Atlantic Forest.

SubAstor from Vila Madalena welcomes Esteban on the 4/5th, and Gina and Allan on the 5/5th for two guest bartenders Open to the public from 7pm. On May 6th, the trio will meet at the SubAstor Bar do Cofre counter.

Gina, Allan and Esteban stay in the capital for a week. Along with Alex, SubAstor’s bar chef, the three go to Paraibuna to taste national fruits. in natura and frozen pulps Bello’s place .

They then depart for Pindamonhangaba, in Fazenda Coruputuba , which grows PANCs – unconventional food plants. Subsequently, they close the expedition in the Fermented Company in Barueri, which produces tea, kombucha, preserves and vinegars.

During the meetings at the Vila Madalena bar, Gina, Allan and Esteban present two different cocktails per night, one already served in their bars and the other created from ingredients discovered during visits to small producers.

Alex Sepulchro also prepares two drink specials each night. In the SubAstor Bar do Cofre, all creations served in the previous two days can be tasted.

In 2019, the Lebanese Jad Ballout, of central station, 27th place in The World’s 50 Best Bars of 2018, and the Electric Bing Sutt; and the greek Vasilis Kyritsis one of the founders of The Clumsiesin Athens, 6th in the ranking (4th, in 2021).

GINA BARBACHANO is a bartender and general manager at Hanky ​​Panky. He studied tourism business administration in Morelia, Michiacén, where he was born. After a few years working as a production assistant at the Morelia Em Boca festival, she decided to try her luck in Mexico City, where she was hired as a bar chef at some points: the boutique hotel Domingo Santo, in the center of the City, and the terrace of the Sagardi, a Spanish-themed restaurant in the Polanco area. From there she went to Hanky ​​Panky. She participated in Speedrack Mexico where she was part of the top 20 bartenders. In 2019, she was chosen to represent the mixology made with Michoacán mezcal, at the Cultural Festival of Mexico, in Ibiza.

ALLAN SUAREZ He has been a member of the Hanky ​​Panky team for three years and has a long history in the hospitality industry. The bartender accumulates experience in bars, canteens, breweries, restaurants and cafes. His first job as a bartender was in 2011 at the Candela Romero restaurant bar at the St. Regis, and also at La Rúa, where he created the cocktail menu. From there he went to Broca and participated in his first World Class, in 2018. In 2019, he started working on Hanky ​​Panky. He won the 2019-2020 Patrón Perfectionist and was among the five finalists of the 2021 edition of the World Class.

STEBAN VARELA is a Chilean bartender who has lived in Argentina for over 10 years. He worked in renowned bars such as Florería Atlántico and Isabel. He is currently an ambassador for Tres Monos Bar y Estudio, which is ranked 33rd in the 50 Best Bars ranking. Esteban is still a representative of Pan Vodka, an Argentine drink produced by Tato Giovannoni.
