It sugar it’s the closest there is to pure energy, that’s why man evolved craving sugar and started producing it. After saturated fat came under investigation during the 1980s, industrial sugar is now considered highly harmful to health, the engine of the obesity epidemic in the United States.

An episode of the Netflix series is dedicated to sugar «In short words», Which describes it as much more than a sweet ingredient or a source of calories, it is happiness, a sensation directly connected to the emotional sphere and how do you replace the” heart “of a food?

Sugar gets to the brain immediately, long before some sweeteners like stevia, aspartame or allulose. It relates to the same brain area as sex and drugs, stimulates dopamine production, and makes you feel happy. It is this satisfaction rate that makes sugar unique: it is not hunger that drives us to eat sugar, it is desire.

A study has shown that the brain’s reward system is activated only when sweetness is accompanied by calories, so here is what to feel pleasure you have to pay the price.

The maximum daily sugar intake recommended by the World Health Organization is less than 10% of the total calorie intake. Fruit sugars are out of this percentage because the fibers contained mitigate their effects on the body, or those present in milk (so much so that an old advertisement from the 1960s erroneously claimed that three teaspoons of sugar had fewer calories than an apple. It may have been so, but the effect of the glycemic load on the body is completely different). We are talking about pure sugar, of that added in drinks, for example, or hidden in sauces such as ketchup (a sachet contains about a teaspoon of sugar), an amount that WHO would like to bring to 5% of the daily caloric intake (6 teaspoons).

THE HIDDEN SUGAR

The most insidious, however, is not in the spoon that we consciously put in coffee, but is the one hidden in processed foods. In fact, large quantities are the problem for health, which is why it is always a healthy habit to go and read the composition of the ingredients before buying a product, even if it is apparently “light”. Being aware is the first way not so much to declare war on sugar, but to reduce its doses and still be happy.
