This Wednesday (29) the koya88 opens its doors to a special night alongside the salmon guru an award-winning bar in Madrid that currently ranks 15th among the 50 best bars in the world.
Directly from Spain, who shares the counter with Thiago Pereira and the chef Thiago Maeda it’s the bartending duo David Paczkowski It is Melanie da Conceicao – she is also the manager of the Madrilenian house and an expert in hospitality.
Specially made for the meeting, the drink menu will only be announced on the day, but the food menu is already available.
Among the items are preparations such as seafood vinaigrette (R$ 55), with squid, octopus, mussels, tomatoes, green apple and emulsion; pork, kimchi and shrimp gyoza (R$39); a fake Japanese tortilla with potatoes, chayote and cabbage, egg and bacon (R$45); buri crudo (R$48), with ponzu milk punch, roe and taberu rayu; and wild amaimo (R$39), with suītopoteto tempura, yuzu aiöli and salsa brava.
It is worth noting that Salmon Guru stands out in the Madrid cocktail scene. Opened in 2016 by bartender Diego Cabrera, the bar is known for its unconventional techniques and presentations, and for an atmosphere that evokes Asian night markets and a manga-inspired room.
According to 50 Best Bars, the bar is already an “institution” and has the role of “ambassador of the city”.
