Ingredients
- 4 sirloin steaks (filet mignon)
- salt, pepper
- 2 garlic cloves
- 1 bunch of rosemary, 1 bunch of thyme
- 15 ml of walnut oil
- 20g of butter
- 3g of sea salt
Café de Paris (sauce)
- 250g of butter at room temperature
- 5 egg yolks
- 30g of sauteed onion
- 1 chopped garlic
- 20g of chopped herbs (thyme, rosemary, parsley, basil, marjoram, dill)
- 1g of curry powder
- 1g of powdered ginger
- 1g of smoked paprika powder
- 10g of mustard
- 1 lemon juice
- salt, pepper
- 500 ml of whipped cream
Preparation mode
- For the sauce, beat the butter with the herbs and spices, slowly add the egg yolks, gently mix in half of the whipped cream and freeze.
- Season the meat and seal on both sides, add a whole piece of pressed garlic and the herb sprigs, add butter and set aside to rest.
- Transfer frozen butter to a casserole dish over medium heat, continue stirring until the butter mixture is above 70 degrees, and add chilled whipped cream to prevent mixture separation.
- Cut the sirloin steak into slices, sprinkle with sea salt and serve with Café de Paris butter.
