One of the best known sweets throughout Brazil, the sweet rice has a taste of childhood. It is a recipe that certainly carries a emotional memory in every mouthful.
During the filming of CNN Travel & Gastronomy through downtown São PauloDaniela Filomeno was able to remember this affective past with a recipe straight from the Girondino cafea classic restaurant in the city center that has a sweet rice that is beyond appetizing.
Balanced and easy to make, the recipe also uses Sicilian lemon zest to add a touch of flavor. After about 1h30 on low heat and another time to rest in the fridge, the candy is ready to be tasted and shared. Next, check out the step by step rice pudding recipe:
Ingredients
- 1 liter of whole milk
- 200 ml of coconut milk
- 150 g grated coconut
- 860 g of condensed milk
- 1.66 liters of water
- 400g of white rice
- Zest of 2 Sicilian lemons
- Cinnamon sticks
Method of preparation
- In a pan, put the water and cinnamon to heat;
- Add the washed rice and then pour the hot milk;
- Stir lightly without stopping;
- Then add the condensed milk and remove the cinnamon;
- Leave it on low heat, always stirring, until the rice is cooked (average time is 1h30 on the fire);
- Add coconut milk, grated coconut and incorporate;
- Let it cool in the fridge for about 4 hours;
- Remove from the fridge and finish with the Sicilian lemon zest.
*Tip: On low heat, the secret is not to stop stirring the rice – which prevents it from sticking to the bottom of the pan. The ideal is also to try to let it al dente.
