Light, fluffy and with a strong flavor. This is the matchá shortcake, a soft cake made with powdered green tea that also takes Brazilian touches – such as whipped cream – and French technique.
O CNN Travel & Gastronomy delved into Japanese cuisine in São Paulo and it proved that the establishments in the city go far beyond sushi, sashimi and temaki. Thus, the Japanese folk candy they also come into play, increasing the abundant variety of flavors and knowledge in the city of São Paulo.
Who teaches the matcha cake recipe is Cesar Yukio, pastry shop with years of experience who has always sought to spread Japanese traditions and culture through sweets. In 2019, he opened the Hanami Confectionery, in the Tatuapé neighborhood, in São Paulo, with a focus on yogashi confectionery – a modern aspect of Japanese confectionery in which the chef uses French and American techniques with Japanese flavors.
And the shortcake is one of those examples, which has an extremely soft dough and a touch of whipped cream that contrasts with matcha. In the dish, the sweet conquers the different tastes and is very photogenic. Below, check out all the ingredients and the step-by-step instructions to reproduce the delicious recipe at home:
Ingredients (Mass):
- 6 eggs
- 110g of refined sugar
- 15g of soluble matcha
- 120ml of whole milk
- 60ml of oil
- 120g of wheat flour
Method of Preparation (Mass):
- Preheat oven to 160°C.
- In a container, mix the flour and matcha well.
- Add milk, oil and egg yolks and mix well with a fouet.
- In an electric mixer, using the globe, beat the egg whites until frothy and gradually add the sugar until the peaks are firm.
- Outside the mixer, gently add the meringue into the dough, in three parts, using a spatula.
- Pour the dough onto a 20cm tin with a fixed bottom without grease or flour and bake for approximately 45 minutes.
- When removing from the oven, let the cake cool upside down.
Ingredients (Whipped Cream):
- 300g of fresh cream
- 300g de nata
- 40g of refined sugar
- 10ml of vanilla extract
Method of Preparation (Whipped Cream):
- In an electric mixer, using the globe, beat the cream, cream, sugar and vanilla in a whipped cream point.
Ingredients (Assembly and Finishing):
- cake dough already baked
- Chantilly
- 500g of fresh strawberries
- Matcha powder
Preparation Mode (Assembly and Finishing):
- Remove the handle and cut the strawberries in half, vertically. Save some whole strawberries to decorate.
- Cut the cake into as many layers as you like.
- Assemble the cake interspersing the dough and whipped cream.
- Decorate as you like, using powdered matchá and strawberries.
