Anyone who has visited Lima knows that the Peruvian capital is lavish in cevicherias, from the most expensive and sophisticated ones, such as La Mar and El Mercado even the more informal and cheaper ones, frequented daily by Limeños.
It was precisely these simpler cevicherias that served as inspiration for the Peruvian chef Diego Maurtua mount the La Capital Cevicheria opened in October on Avenida Bartolomeu Miter, in Leblon, Rio de Janeiro.
This is his first venture in the area after working in the kitchens of prestigious restaurants Sult and Lima Peruvian Cuisine .
In a small room with an open kitchen, Diego and his team serve several Peruvian recipes, listed on the placemats that cover the tables.
The main highlight is the delicious and authentic ceviches, offered in five versions. Don’t miss the great traditional ceviche (R$ 48), prepared with cubes of dorado, leche de tigre, red onion, camote potato (sweet potato), green corn and cancha, that crunchy toasted corn essential in the recipe.
Also tempting is the ceviche la capital (R$59), which features shrimp, squid and octopus bathed in a more powerful leche de tigre, with a touch of yellow ají.
The list of main dishes includes classics of the Andean country such as lomo saltado (R$65), ají de gallina (R$65), seafood rices (R$69) and chaufa del mar (R$69) — the latter is a typical dish of Peruvian cuisine that reflects the strong influence of Chinese immigration in Peru. It is prepared in the wok with rice, egg, vegetables, oriental seasonings, shrimp, squid and octopus.
To sip there is (of course!) pisco sour (R$ 32) and Peruvian Cusqueña beer (R$ 17) and, for teetotalers, chicha morada (R$ 12), a traditional Peruvian refreshment made from purple corn, also known as maíz morado.
