For Mother’s Day on May 8, the choice is green that you can’t get any greener. Where the words sustainability, biodiversity and zero km are there keys to success (not just marketing) of many restaurants, it has also become so for other realities in and out of town. For Mother’s Day you might as well disconnect from everyday life and immerse yourself in the greenery. And ethically correct. Nothing is thrown away, it is not wasted, it is recycled as much as possible, it is preserved, the tops and roots are used and compost is made. In this way we have the absolute quality control and the characteristics of those flavors that are decisive for the success of the dishes. The garden becomes a “pantry” and aspires to become the new frontier of excellent gastronomy. Even without many pretensions. It’s a philosophy of life and cooking, to have a great result on your plate.
