With a voracious appetite to expand his business, the Peruvian chef and restaurateur Marco Espinoza built a small gastronomic empire of twenty houses spread across three states — Rio, São Paulo and Brasília.

At Duvivier street, in Copacabana (near the Copacabana Palace), in the south of Rio de Janeiro, the house is affiliated to the so-called nikkei cuisine marked by recipes that present a fusion of flavors, techniques and aromas of Japanese and Peruvian cuisine.
In the spacious and upbeat atmosphere, marked by dozens of colorful flags hanging from the ceiling, it is worth starting the meal with two suggestions that translate well the spirit of Nikkei cuisine.
one of them is the andean nigiri (R$26 a pair), which features a slice of raw tuna on top of the Japanese rice ball, enhanced with yellow ají, quinoa and togarashi pepper.
Follows the same Japanese-Peruvian footprint as sushi roll (R$ 45 with 10 pieces), stuffed with breaded shrimp, avocado and white fish and topped with an unusual acevichado sauce (prepared with the leche de tigre in the ceviche).
The house also ceviches (from BRL 39), sashimi (R$ 159; 20 units, with the best fish and seafood of the day) and great hot dishes, such as tuna quinoa (R$72), which combines tuna seared in a quinoa crust with yam puree and spicy Nikkei sauce.
It is still worth trying the grilled octopus (R$79) with Andean chimichurri and yellow pepper sauce. It comes with rice sautéed in the wok with vegetables, shrimp, squid and octopus.
Who likes robust drinks cannot miss the inkas smoke (R$ 35), signed by the Peruvian bartender Anthony Aedo . The ethylic delight brings together whiskey, Brasilberg, red and white vermouths and purple corn bitters. Served in a glass bottle, it is smoked before going to the table with cinnamon and rosemary.
