Origin Restaurant, in Salvador, promotes dinner with world-winning chefs

On February 1st, the first edition of the “Origem Convida” project of 2023 takes place. Fabricio Lemos and Lisiane Arouca receive, at Origin, colleagues Eduardo Ortiz and Luana Sabino from Metzi, and the executive chef from DOM, Rubens ‘Catarina’ Salfer .

Origin was born in 2016 as the first restaurant in Salvador to exclusively serve a tasting menu. Six years later, in 2022, he joined the The World’s 50 Best Restaurants conquering the 52nd position among the 100 best restaurants in Latin America and the only one in Bahia in the select list.

Metzi, restaurant owned by the couple Eduardo and Luana, also entered the list of The World’s 50 Best Restaurants in Latin America last year, in 27th position, with its cuisine that masterfully blends the flavors of Mexico with Brazilian ingredients and touches.

Rubens, affectionately called Catarina because he was born in the southern state, is the executive chef of one of the most awarded and important restaurants in Brazilian cuisine, the DOM by chef Alex Atala, holder of two Michelin stars and in 33rd place on the list of The World’s 50 Best Restaurants in Latin America.

The dinner of these 5 renowned chefs will have 12 stages, including snacks, starters, main courses and desserts. Among the highlights are the oysters with tomato and basil and the oxtail with yam and chili pepper by chef Catarina, and the white mole with cauliflower, jambu and black tucupi by the Metzi duo, who also prepare taco de siri mole, mole of sauva ant, lemon and heart of palm.

On the eve of Iemanjá Day, one of the most emblematic dates in Salvador, Fabrício Lemos honors the Queen of the Waters with a feijoada from the sea accompanied by coconut rice and palm oil farofa. Lisiane Arouca signs two desserts.

Origin Convida aims to promote exchange between cooks, in addition to presenting guests with the initiatives of the Ori Institute, a collective that develops research work and valorization of ingredients from the five biomes of Bahia together with cooperatives of local producers.
