Parintins 2024: discover the wealth of flavors of traditional Parintin cuisine dishes

For those who go to the Parintins Festival, the experience is not just limited to the folklore performances by the Caprichoso and Garantido oxen. In addition to the visual and musical spectacle that attracts thousands of tourists every year, the city has another attraction that promises to win over visitors: its traditional cuisine, which offers an even deeper immersion in Amazonian culture.

In various parts of the city, there are restaurants, snack bars and small food stalls along the streets with the famous crueira donuts, tacacá or roasted fish that perfectly complement the energy of the festival.

In the morning, regional cafes attract a crowd of tourists and locals. The dish is crueira, a type of donut or fried dumpling. The dough is made with crushed cassava and pressed in a tipití (typical fiber utensil) and sieved. What remains in the sieve will become flour, but what is left becomes the traditional crueira.

On the island, lunch time is synonymous with good fish. The acari, popularly known in Amazonas as bodó, belongs to the catfish family and is a fish easily found in the state’s rivers and streams, although it is not as famous and consumed in other cities, in Parintins it reigns supreme as a favorite among the population.

Tacacá, another highlight of Parintins cuisine, goes very well in the late afternoon. The broth has a strong flavor and combines the famous tucupi, a liquid extracted from the cassava root, which is cooked for up to five days, with jambu leaves, which guarantee the numbness of the tongue, shrimp and cassava gum. On Tupinambarana Island, visitors will find several stalls selling tacacá scattered throughout the streets, which are a hit with tourists who dream of trying regional flavors.

In the early hours of the morning, the obligatory stop is to eat a sandwich that is popular with those going to the festival. Made with ball bread, cheese, ham, lettuce, tomato, cucumber, cabbage, straw potatoes and the egg in the main role, X-pio is the most sought after in the city. The sandwich was created by Paulo César Luz, in the 90s, with the aim of selling a cheap snack to the population of Parintina. After 30 years, the tradition remains strong in the family, which still has the X-pio as the flagship of the house.
