Paris hotspot, Caviar Kaspia from SP has a menu adapted to the Brazilian palate

Opened in 1927 in Paris by Russian Arcady Fixon O Caviar Kaspia, in the trendy Place de La Madeleine, it is the perfect place to meet international celebrities, fashionistas and influencers.

In Sao Paulo the city chosen to host the restaurant’s first unit in Latin America, the address is also elegant: inside the CJ Shops a stronghold of luxury stores on Haddock Lobo street, in Jardins.

Following the decor of the famous turquoise and gold tones of the other units in the chain, which maintains two houses in Paris and a recently opened one in Dubai, here, the duo of architects Sig Bergamin and Murilo Lomas were invited to the project and managed to give the restaurant a more modern and cosmopolitan air.

Another difference between the São Paulo unit and the French unit is that, here, in addition to caviar, the restaurant has seafood, meat and pasta dishes on the menu – after all, they understood that the Brazilian public appreciates caviar, but it is not something that you are used to eating routinely or during a quick lunch at the mall.

Of course, caviar remains the star, but the “supporting actors” are beautiful and deserve to be highlighted in the kitchen led by the chef. Fabiana Agostini , who underwent training at the head office in Paris before heading the Brazilian house. Here, she was responsible for changing the menu, prioritizing local ingredients.

From the starter suggestions, the Thon Royal (tuna tartar – R$65), the Saint Jacques et Caviar carpaccio (scallop, yuzu and caviar carpaccio – R$160) and the Foie Gras Mi Cuit au Sauternes terrine (terrine of foie gras with pear puree and honey tuille – R$168).

There are salad options, including Salade au Saumon Fumé (smoked salmon salad – R$58), and Crabe Royal and Avocat (mixed crab and avocado salad with lemon cream – R$130).

Of the main dishes, it is worth mentioning the Á La Potargue (Tagliolini with Bottarga – R$89), the Au Caviar (a combination of tagliolini and 15g of roe – R$398), the Bar à la Vapeur (sea bass, sherry sauce, puree of manioc and grilled romaine lettuce – R$118), the Saumon Fumé Tradition (smoked salmon with blinis and sour cream – R$97), the Flat Iron Wagyu et Gratin de Pomme de Terre et Caviar (Grilled Flat Iron, potato gratin and caviar – R$220) or a delicate seared tuna with mashed sweet potatoes, quinoa and Asian sauce (R$89).

Finally, desserts like Paris Brest (Choux Pasta with Almond Cream – R$32) and Tarte au Chocolat (Chocolate Pie with Red Fruits – R$38).

Those who prefer, the famous baked potatoes, which are the flagship of the house in Paris and Dubai, are on the menu in four options, with values ​​ranging from R$ 138, the roasted potato with salmon roe, to R$ 1,260, the baked potato with chive cream and 50g of caviar.
