Scientists suggest that an egg needs to be cooked for over half an hour so that it has the perfect texture. The researchers detailed the method in article Published on Thursday (6) in the scientific journal Communications Engineering of Nature.

In popular belief, the ideal egg cooking time is at least ten minutes. However, this can make it difficult to make the texture of the clear and egg uniforms, as each of these structures has different components in its composition. Given this, researchers at the University of Naples, Italy, found that changing the egg between boiling water and water at 30 ° C (warm) every two minutes for eight cycles can be the ideal way for the egg to have the perfect texture. This method leads to a total cooking time of 32 minutes.

To develop this method, the researchers used physics: they created a model of how a kitchen egg, calculating the way energy spreads to the center over time, using two equations to describe this process.

By solving these equations, they found that the best way to cook it evenly is to alternate between two different temperatures, allowing both parts to cook separately.

After cooking, the researchers analyzed the egg using spectrometry and a scanner, and found that the proteins in the gem were less denatured, while in the egg whites they were more denatured. Then they asked people to try the eggs cooked in this method, which reported that the egg white was slightly sweeter than in traditionally cooked eggs, while the clear was less sweet.

According to the researchers, in addition to the differences between texture and taste, the eggs cooked in the method used in research contained a greater amount of nutrients, such as antioxidants, compared to traditionally boiled eggs.
