Pop-up Japanese restaurant opens in Rio curated by Telma Shiraishi

Between September and January, the Wonderful city win one pop-up restaurant made to receive emblematic chefs of Japanese cuisine in Brazil.

The project dinners Om.akase which takes over the top floor of the January Hotel in Leblon, take place on three nights each month with a tasting menu for just eight people at the counter .

headed by Oskar Metsavaht creator of the hotel, and curated by restaurants and chefs from Telma Shiraishi, who runs Aizomê in São Paulo and is an Ambassador for Japanese Cuisine, the idea of ​​the project is to create an ephemeral experience that values ​​Japanese culture.

According to Metsavaht, the gastronomic endeavor comes from a “look” that he shares with Japan. “I have been to the country several times and had the opportunity to get to know and understand its culture, in which the creative exercise of seeking the synthesis of concepts and experiences leads to a powerful minimalism in aesthetic and ethical meanings”, he explains.

The project’s name comes from the word omakase, a Japanese tasting menu in which diners trust the chef’s choices.

“The concept of Omakase is very specific, it is a total vote of confidence for the chef who expresses his art without limits. We think for the hotel chefs who differentiate and complement each other”, says Telma Shiraishi, who kicks off the dinners on the 22nd, 23rd and 24th of September.

In addition to Telma, six other chefs will express their cuisines and influences over the next five months to guests and customers.

The experience costs BRL 690 per person and includes an authorial menu at various times – the December edition, led by Edson Yamashita, from Ryo, costs BRL 1,200. Reservations can be made in advance at official site from the project.
