Rafael Aoki, from Quincho, creates dessert tasting menu with Lucas Corazza and Bianca Mirabili

O Quincho vegetarian restaurant run by chef Mari Sciotti, will make a night, shall we say, sweeter than Monday (21). Common full dessert tasting menu harmonized with drinks, the event, which is in its second edition and should be repeated in the future, aims to bring confectionery to the forefront, with dessert as the protagonist, and reinforce the concept of Dessert Bar, a common practice abroad and which in Brazil is still not widespread.

the pastry chef Rafael Aoki, responsible for the desserts of the house, invites two big names: Lucas Corazza juror of the program Que Seja Doce, of which Rafael himself was a champion, and Bianca Mirabili pastry chef at the award-winning Evvai 🇧🇷

While Lucas is a more classic confectioner, of traditional Brazilian desserts that will be deconstructed and presented in other ways during the tasting, Bianca is a very technical confectioner based on valuing the product. By joining these two poles of pâtisserie, Rafael intends to show the public the innumerable possibilities of confectionery in different looks and styles. More than that, the idea is to put a spotlight on this range of restaurant confectionery, elevated to the place of plated creation.

The menu will consist of six times, divided into three categories: freshness (fruity, floral, herbal and citrus), unctuousness (dairy, almond, chocolate and spices) and bitterness (earthy, caramelized, smoked and woody). Instead of labeling the experience in a more traditional format, the structural line is guided by the intensity of flavors, starting with the light ones and intensifying over the course of the menu.

To accompany each act, the bartender Andrea Ambrosano Junior better known as Deco, created four drinks, three of which were original and the last one more classic.

The experience will begin with a cover charge and snacks, served alongside the Sutileza drink (gin, soursop, lemongrass cream, lavender and jasmine bitters). Then comes the first act, in which desserts such as the boursin dumpling with jabuticaba consommé and the roll cake with tomato compote, mascarpone ice cream and green apple will be paired with Respire (gin, eucalyptus cordial, Tahiti lime and pasteurized egg white). In the second act, unctuousness is present in recipes such as the fermentation waffle with noisette butter ice cream and black apple, accompanied by Vento Seco (dry vermouth, white vermouth, limoncello and Tahiti lemon). For the grand finale of the tasting, it is the traditional Rabo de Galo (cachaça, red vermouth and bitters) that comes into play to enhance the bitterness of desserts such as the 85% chocolate fudge with black cocoa brigadeiro and cocoa honey sorbet.

For those who want to live the experience, reservations can be made from 7:30 pm. The price of the menu, including paired drinks and house water, is BRL 280.
