One of the best restaurants in Rio de Janeiro, Chez Claude has a very fresh new product . Since last week, the chef’s French address Claude Troisgros began offering a menu with bistro classics.
The reason: to celebrate the closeness of Paris Olympics which begin in a month, on July 26. It is worth remembering that the last time the French capital hosted the Games was in 1924, that is, 100 years ago.
The new menu includes 16 suggestions, which will be on display until the end of the Olympics, on August 11. A classic and tempting French sauce, béarnaise graces poached eggs covered in parmesan crumble (R$48).
Another interesting entry rescues a recipe from the great chef José Hugo Celidônio (1932-2018), who was known for substituting French ingredients for Brazilian ones. Les esgargots de celidonio (R$42) are prepared with sautéed chicken hearts and escargot butter.
