Inaugurated in April of this year, The school chef’s space in Botafogo Elia Schramm which combines social work, courses, debates and events, will receive among July 11th and 13th the chef Rubens Salfer Known as Catherinefor its first course aimed at people who want to invest in a gastronomy operation.
The course will be divided into two modules: Leadership on the 11th of July, and menu engineering , on the 12th of July. In the first, the focus is on topics related to managing people and processes. To explain the difference between managing and leading, Catarina talks about positions and needs, in addition to presenting tools to engage the team and pointing out common mistakes made by managers.
In the second, the teachings are about the concept, competitors, formatting, costs, technical data sheets, use of ingredients and utensils and, finally, analysis on how to improve sales and margin of the items.
The investment, per student, is BRL 1,600 or BRL 600 per single class, with didactic material included and capacity for up to 20 students per class.
not yet the 13th, a four-hand dinner with Catarina and Elia enshrines the visit of the guest chef to Scuola. The six-course menu begins with a bread cover from João Padeiro and a trio of tomato butter, Cantabrian anchovies and black truffle.
Then, snacks of crispy phyllo, tuna and foie gras and stuffed cassava with Brazilian cheese cream and sun-dried beef roast and antipasto, a scallop crudo with miso and mini vegetable pickles.
In the main dishes, risoni with mushrooms, “uovo” and tucupi and pork ribs with canjiquinha and carrots. Macarron Romeu & Julieta, made with canasta cheese and guava and fleur de sel textures, closes the sequence. Dinner, which will be harmonized, will cost R$ 650, with capacity for 20 people.
