Surf and Turf, the tasty mix of sea and land proteins, takes over SP menus

the term surf and turf was born in the 1960s in the United States and its essential premise is to pair sea protein with local meat. And since then, the combination of the two ingredients has been gaining space on the menus, new and bold combinations, which have become popular with customers.

The term, as we use it today, came from the pairing lobster tail with beef filet mignon . According to the chef Andre Mifano from the Donna restaurant, each country has its combination of sea and land.

“In the USA – where the expression was created – the combination is filet mignon with lobster. In Australia, there is the Carpet Bag, which is filet mignon with oyster, while the Spaniards combine squid with pork. And, of course, in Brazil we can extrapolate to Xinxim de Galinha, which is shrimp broth with chicken”, says the chef.

“It is possible to achieve nuances of flavors that only this union offers. Depending on the ingredient, you gain texture, sweetness and minerality, an item that only seafood provides”, explains the chef. Fabio Lazarini in front of Varanda D.inner.

to the chef Alexandre Vorpagel, who runs the kitchen at Casa Europa and is a partner at the Bottega 21 bar, combining land and sea is the best way to extract the power of two proteins.

“I particularly think pork is excellent with fish, shrimp and especially squid. My favorite combinations are squid with pancetta, so much so that I’ve already made duck rice with grilled squid, filet pescatore – where you can make an anchovy sauce on top. Anyway, the combinations are endless”, concludes Vorpagel.

One thing is for sure: red meat and seafood – together in one meal – appeared long before the 1960s. Indigenous peoples of North America celebrated special occasions with feasts washed down with venison, cod and lobster, and we cannot forget the Europeans, who combine raw ham with fish and cod with bacon, or the Chinese, with their yakisoba with chicken, meat and shrimp, made “since forever”.

The small house run by Lalo Zanini in Baixo Augusta, serves Calamars gratines à la béchamel: squid au gratin with béchamel sauce, finished with egg yolk and bacon crispy accompanied by a basket of long fermentation breads.

And that’s where the good house meats come from. The Surf and Turf representative however is Arroz Terra e Mar, made with collared rice, squid, octopus, shrimp and pancetta (R$ 109).
