The 96 best pizzerias in Italy 2022 for Gambero Rosso

For Gambero Rosso the best pizza chefs in Italy are Franco Pepe from Pepe in Grani in Caiazzo (Caserta) and Simone Padoan from I Tigli di San Bonifacio (Verona). The inventor of the “functional pizza” which is good and good for you, and the artist who was able to wisely mix haute cuisine and large doughs, are at the top of the new guide. Here is the podium, a taste of the ninth edition of the Gambero Rosso guide which returns richer than ever, and again assigning scores, suspended in the last edition due to Covid, telling of a world that in the long periods of stop imposed by the pandemic has not stopped but rather has invested to improve itself: to work, for example, su excellent doughs, on new genres ranging from pan pizza to pan pizza and even steamed pizza, and to make even the most loved dish in the world ever more sustainable.

The inspectors who visited throughout Italy told this the over 680 pizzerias featured in the 2022 guide, evaluating them – based on leavening, flours, raw materials and cooking but also service in the dining room – with a score based on which they have drawn up the final rankings among which the 96 addresses that scored 90 or more points. Among these, the Tre Spicchi (which include classic Neapolitan pizzerias, those that make Italian pizza but also gourmet) are 86, while the Tre Rotelle (pizzerias by the slice) are ten headed, as always, by the Roman Gabriele Bonci .

The list of special prizes is also rich: for example, Florentine Concept of Era Ora di Ortigia is the Best Pizzaiolo of the yearor, the pizza Summer Light (with sauteed escarole, provola, chickpea hummus, cucunci, cod puff, potato rosti and lemon zest) of La Contrada di Aversa (Caserta) is the best Neapolitan pizza, while the Assoluto di Pesca di Seu Pizza Illuminati of Rome, also awarded by 50 Top Pizza, is the best sweet pizza this year.
