The art of the traditional Italian artisan ice cream maker is about to be nominated for Unesco Heritage

It was only a matter of time: after the art of Neapolitan pizza makers became an intangible heritage of Unesco, that of Italian espresso coffee which has just been officially nominated, it was to be expected that sooner or later someone would rightly think of asking the Organization of United Nations for Education, Science and Culture to also recognize the craftsmanship, dedication and passion of all those ice cream makers who in Italy prepare the ice cream that gives us so much joy by hand, with great raw materials, technique and great ideas. And for this the first step was taken: from Sigepthe Italian Exhibition Group fair dedicated to ice cream and the world of sweets in general has just begun in Rimini, the process for the candidacy of the profession of “traditional Italian artisan ice cream maker “.

The candidacy

It all started from Cividale del Friulia UNESCO heritage town that also hosts a professional training school dedicated to the art of ice cream, and from Unesco Club of Udine which now together with the trade associations – Italian Gelato Makers Association to Confartigianato, the National Committee for the Defense of Artisan Gelato to CNA, but also the Gelato World Cup – initiated the path to enhance the craft and professionalism of these masters of artisanal ice cream who have brought an art that has become a symbol of our country to the world.

The process

Of course, it will take some time: after having launched the idea, having obtained the support of the representatives of the sector, the candidacy will have to be formally presented, then an institutional committee and a technical commission will have to be created to support it, therefore – just as happened recently for coffee – it will be necessary to broaden the audience of supporters to ensure that the registration is national, that is, the dossier promotes an art that the whole country shares (always coffee, for example, the candidacy was accepted following the union of the requests of Treviso and Naples). At this point it will be examined by the Italian ministerial commission for Unesco made up of representatives of all ministries who, among the various projects presented each year, decide which one to propose. After this national negotiation, if the idea goes as we hope, the international negotiation will begin during which the last will be the Governing Committee for Intangible Cultural Heritage made up of representatives from 24 countries around the world. An estimate? Even seven, eight years: it was the time it took for the art of pizza makers to be recognized.

Why do we believe in it (as well as hope)

Meanwhile, the universal passion for Italian ice cream gives us hope, and is supported by impressive numbers: according to the data released by Sigep, artisanal ice cream in 2021 generated a turnover of 2.3 billion euros in our country. Figures destined to rise, because the world of ice cream is in turmoil as never before, and thanks to its artisans who keep up with increasingly greedy but also contemporary flavors: vegan, gluten-free, lactose-free, with less and less sugar. For a good ice cream, which is always healthier and therefore gives even more joy.
