After pizzerias, ice cream shops, street food (and much more), now Gambero Rosso arrives in the bookstore with a new guide, the only one that was missing: the Gambero Rosso Sushi Guide, the first dedicated to Japanese cuisine. In all 250 addresses in every region of Italy, where to eat sushi but not only, among which, as always, the best stand out, starting with 22 restaurants at “Tre Bacchette”, considered the top of the top to taste the authentic cuisine of the Rising Sun (you can find them in the gallery above).
The inspectors started from respecting the nipponic orthodoxy in the kitchen, calibrating their judgment after having seen the work and tasted the dishes of great chefs who brought their gastronomic culture to Italy. Are the “7 Sushi Masters” to which the guide has dedicated a special prize and they are all in Milan (the most awarded city ever, also for the Three Wands): Haruo Ichikawa dell’Ichikawa, Yoshinobu Kurio of the Yoshinobu, Hirazawa Minoru of Poporoya e Shiro Poporoya, Ikeda Osamu of Osaka, Wicky Prian with Wicky’s Innovative Japanese Cuisine, Kato Shozo of Tomoyoshi Endo e Masashi Suzuki of Iyo Omakase.
In the new publication, the names of the “masters” join those of many other skilled chefs, including Italians, all madly in love with Japan. It is the chefs who together with rigor they have been able to grasp the creative and fusion side of his cuisine, which gave birth to others – for example the nikkei from the meeting with Peru or that nippo-brasiliana -, which is simultaneously very rich in dishes resulting from intertwining and evolutions of Chinese or Korean preparations, and which still today is a source of inspiration for creative encounters with the Mediterranean tradition with sublime results. Il Gambero now tells us all this, with a versatile guide who has been able to fully grasp the contemporary spirit of one of the most popular kitchens also differentiating his recommendations with very different restaurants and awards: there are many fusion or Chinese addresses and, in addition to the Tre Bacchette, and the “Maestri”, in the guide there is space for an appendix dedicated to take away and dark kitchens (all the winners in the gallery above).
