It will be another Pasqua in lockdown, with fewer people, a different spirit than usual, but it remains a day of rebirth to celebrate, and a special menu cannot be missing (perhaps with a matching atmosphere) with which to welcome the family around the table. This is why we asked for advice from Csaba Dalla Zorza, great cook and TV presenter, queen of style and teacher in the art of hospitality.
For Easter Csaba first of all recommended a four-course menu – which you can find in the gallery above, refined and elegant: it starts with gods sofa, continues with lemon ravioli – «because fresh pasta – says Csaba – for the party must never be lacking» – so with a spring quiche, and ends with cream choux with coffee cream to combine (or alternate) with the inevitable eggs and colomba.
A menu classic but at the same time innovative, thanks to preparations that are never too complex, much lighter and healthier than usual and simple, seasonal ingredients, he says the way Csaba interprets traditional cuisine: he talked about it in his latest book The Modern Cook (Guido Tommasi Editore), in which he has enclosed 120 recipes of great classics adapted to modern times, which also gives the title to his new program on air from 11 April: The Modern Cook, channel 33 Food Network, every Sunday for 10 weeks at 3pm.
THE EASTER LUNCH ACCORDING TO CSABA
«I remain very attached to traditional cuisine – says Csaba – also because I strongly believe in its value: allows you to experience the spirit of the party even on special occasions such as this Easter, and makes the day more special even for those who do not give it a religious sense ».
«Easter lunch – says Csaba – is for me a perfect opportunity to bring nature to the table with all the first fruits of spring, for example peas or asparagus which at the beginning of the season have much more flavor and are really special for those who know that each ingredient has its time: there is a part of the pleasure in expectation“. “In addition – he continues – vegetables are versatile ingredients, good to eat alone and ideal for a quiche like the one I propose in this menu: practical to bring to the table, it is a valid alternative for those who do not want to eat lamb without betraying tradition, as it contains eggs. I am omnivorous but I think it is necessary to take a change of pace: I eat very little meat. It can also be done at Easter ».
HOW TO APPLY THE TABLE
To make the day special, the atmosphere counts, and for this reason a beautiful table always makes the difference: «For me the Easter table – continues Csaba – is with the pastel colors such as green, yellow or pink, with delicate combinations of tablecloth plates: if the plates are decorated, a plain color tablecloth is needed, and vice versa ». The password, as well as the menu on the other hand, is not to exaggerate: “My advice – concludes Csaba – is to avoid, for example the three glasses that create a slightly set wedding atmosphere or the candles because it is not a dinner. Rather, focus on the symbols that tell all the lightness and simplicity we now need: eggs, chickens, small buttercups to put in small jars or vintage bottles to spread on the table instead of bulky centerpieces.
