Huzarensalade – Holland
Huzarensalade is a Dutch version of the Olivier salad, better known as the Russian salad. What goes into this salad and what not is a controversial issue, but it is usually made with a mix of potatoes, apples, gherkins, carrots, scallions, ham or veal or beef, mayonnaise, peas and various condiments.
The vegetables and meat are cooked and combined with the rest of the ingredients. Then the salad is allowed to cool before being served. It takes its name from the salad that the hussars (Hungarian cavalry) prepared: to eat quickly when they were behind enemy lines, they used pre-cooked food and mixed it on the spot to make this salad.
Huzarensalade is served as a side dish for grilled meat, usually for Christmas or New Year.

Panzanella – Italy
Panzanella is an Italian salad made from moistened stale bread, with the addition of tomatoes, onions or basil and a dressing of vinegar and olive oil. It is a specialty of Tuscany, where it is usually served in summer, using fresh seasonal summer vegetables.
Panzanella sometimes includes other additional ingredients such as cucumbers, olives, and cheese. Panzanella is believed to have been invented out of necessity, as a means of using advanced ingredients, such as stale bread. The salad was described for the first time in 1500, in a poem by Bronzino.
The name of the dish derives from two words: pane e zanella, which means “tureen”. However, some people tend to disagree and claim that it comes from the word “panzana”, which means food.
