Here is how to prepare this hearty dish for Sunday brunch.

Ingredients:

100 grams of spinach

a cherry tomato or a dried tomato

35g strong soft cheese (e.g. Tunworth, Golden Cenarth)

an egg

80 ml of cream

15 g grated hard cheese (e.g. Old Winchester)

Fresh basil leaves

Method:

Butter a small baking dish and line it with the spinach, making a small hole in the centre. Arrange the cherry tomato (quartered) or sun-dried tomato (chopped) on top of the spinach. Spread the soft cheese around the plate between the tomatoes. Add the chopped basil leaves and, if desired, add any cold cuts. Season with salt and pepper. Break the egg into the center of the spinach. Pour the cream over the egg, avoiding breaking the yolk. Sprinkle with grated hard cheese. Place in a hot oven (180°C) for 8-10 minutes. Leave to rest for a few minutes before serving.
