UNESCO: Harissa, Tunisia’s hot sauce, on the list of Intangible Cultural Heritage

Harissa, the hot sauce found on every dish in Tunisia, was listed by Unesco in the intangible heritage of mankind.

Harissa, which is exported to many countries, is made from sun-dried peppers, fresh spices and olive oil, which helps in preservation and softens the hot taste.

“It is used as a condiment, as an ingredient, and even as an independent dish. Harissa is known throughout the Tunisian territory, where it is prepared and consumed, mainly in the areas where the pepper. It is considered an element of the national culinary identity and a factor of social cohesion. It is prepared and consumed throughout the Tunisian territory and is considered an element that unites the country,” the Tunisian nomination file states.

The Convention on the Safeguarding of the Intangible Cultural Heritage promotes the preservation of the knowledge and know-how necessary in traditional crafts. A tool of cultural diplomacy, it rewards “cultural practices that are passed down from generation to generation, such as oral traditions, performing arts, social practices, rituals and festive events or even knowledge and practices related to nature and the world”.

The list of intangible heritage of humanity currently includes more than 530 items, 72 of which are in need of urgent conservation measures.
