Weekend away in Gavi: in the beauty of Villa Sparina Resort

the countryside is even greener this year. Thanks to the rains, the vegetation shines even more than usual and creates that infinite carpet of brilliant, almost blinding green that welcomes us at the entrance to Villa Sparina Resort, to Gavi in Piedmont.

It is therefore impossible not to be enchanted by the breathtaking view of the vineyards that run along the hills of Monterotondo and that surround the company born in the early seventies from the dream of Mario Moccagatta and his wife Brunette. However, it is thanks to the children Stephen, Tiziana And Maximum That Villa Sparina takes a further leap forward becoming what it is today: both a place of hospitality – thanks to the opening of the hotel in 2004 – and a gastronomic point of reference with the gourmet restaurant hen.

The wine and the cellar

The weather – fortunately – is on our side, and it only helps us appreciate the time spent away from the traffic, the madness of the city and thus embrace the slow pace of the countryside. Milan it’s not that far away (just under 1 hour and 20 minutes away) but it seems more and more so while, sitting in the garden bar, sipping what is now a business card of Villa Sparina theirs Gavi DOCGa fresh balanced white, with fruity notes and an intense yellow.

But it is just one of the many wines produced by the company which boasts 100 hectares of property, of which 70 are dedicated to the cultivation of native vines: Gavi And Barbera. sipping what is now a business card of Villa Sparina theirs Gavi DOCGa fresh balanced white, with fruity notes and an intense yellow.

The walk through the vineyards is invigorating, but the real magic is found in a hidden, discreet place, away from eyes, namely the cellars of the villa. A real gem, as well as a treasure of history dating back to the 18th century. Modernized today, of course, but with wisdom, so that between the rooms, the barriques and the wines, waiting to be brought to the table, a silent and delicate alchemy is created between the past and the present.

The quiet of the hotel and the clucking hen

Kissed by the sun, ventilated by Ligurian breezes and surrounded by greenery, a Villa Sparina you can rest best inside theHostelry, the 4-star superior hotel which boasts 33 rooms, all united by a rustic but refined style. And then, like an oxymoron, where the hay was once stored, a humble and unpretentious place, now stands a real pearl: the restaurant Hen.

The chef Graziano Caccioppoli in its menu, which reinterprets the most “traditional” flavours, it offers a veritable whirlwind of flavors from all over Italy, from Piedmontwhere it is located, at Ligurianeighboring land and from which he took so much, and, finally, also in Campaniahe who is originally from Vico Equense. The starter is rich and varied, on a table where leavened products, Fassona steak, vitello tonnato and montanara coexist with a certain balance, although a note of merit goes not only to the gnoccorotondo with pesto – which literally explodes in the mouth – but also to the bovine cheek Piedmontese braised with Gavi, tender succulent. The desserts deserve a separate chapter, from a real tower of cream ice cream that you can garnish according to your tastes to the puff pastries.

In fact, the renowned hats Borsalino, so dear to cinema and celebrities, are still made as in the past. We were able to notice this in a guided tour that recounted the long manufacturing process among historic machinery – the same ones used since the industry opened -, expert craftsmen and refined raw materials. It is also possible to pay a visit to the dedicated museum, where it is possible to have an even broader historical and cultural look at the brand that produces hats from 1857.
