Where do bartenders drink? With Gabriel Queiroz, from Amargot, in São Paulo

Gabriel Queiroz is an entrepreneur in the entertainment industry and beverage specialist. Earlier this year he opened the Bitter in front of mahau at the Itaim Bibi in São Paulo, another venture of which he is also in charge alongside other partners.

The Amargot drinks menu was created by Gabriel alongside the mixologist and bartender Sylas Rocha . The duo thought individually about each cocktail, understanding the particularity of each drink.

Gabriel describes the house as a place “to enjoy the bitter, a cocktail house for those who want to learn to drink, in an uncomplicated way and getting rid of the clichés. For those who already like it, the experience can be taken to another level. In short, Amargot is a manifesto for quality cocktails, real and democratic!”.

When Gabriel isn’t in charge of Amargot (which is rare), he roams the city looking for good drinks. Here’s a small sampling of his favorite bars.

Caledonia

Whiskey cocktails have always fascinated me, but the bar experience Caledonia is a whiskey history and culture class that I fall in love with more and more with each visit.

Koya 88

O Koya 88 is one of the great highlights of the good cocktail shop that has been developing in downtown São Paulo.

With great cuisine, a cozy dimly lit environment and tables on the street, the bar offers a high quality drink menu.

Thiago Pereira , partner and responsible for the creations of the house, made an incredible marriage of oriental ingredients with classic cocktails. My highlight is the Ume Negroni, full-bodied and slightly salty.

Bitter

It’s very cliche for me to talk about my own bar, but I’d be lying if I didn’t put the bar I drink the most on this list.

O Bitter has a concept that is totally outside the axis of Itaim Bibi: from the music, the atmosphere and the way of communicating with the customer, the entire bar is an alternative breath in the middle of the “farialimer county”.

Even with the name showing our preference, the menu is very versatile, and meets all the tastes of those who want to have good cocktails.

In case I’m not at the counter, Thiago also offers amazing drinks for all tastes.

Bar do Toninho (former Confessional)

O Tony’s Bar ex-Confessionário bar, delivers an experience of a root bar with the seal of quality from the owners of Guarita Bar, Jean Ponce and Greg Caisley.

Beyond the weight of these names, the experience of having a good drink with snacks of great affective value, in the middle of Largo da Batata, is something invaluable for the gastronomic culture of the region.

When you stop by, be sure to try the Terra da Garoa cocktail, which breaks the paradigms that cilantro tastes like soap.

Luiz Nozoie’s Bar

The most rooted pub of all is the Luiz Nozoie’s Bar . Paper commands, limited stock, environment that has remained the same for the last 60 years.

All these ingredients tend to be the formula of one of the many bars spread across this country. But there, the magic is different.

The beer is cold at an old ice cream counter, which ensures that the temperature is one of the lowest I’ve ever had in my life. The snacks, made in an extremely homemade way, taste like grandma’s food, and are always served hot and on time.

But the icing on the cake are the house beats, which complete the experience of the true bar that defines boutique culture.
