Where do bartenders drink? With Jeff Silvestre, from Stella Bar, in São Paulo

It’s been at least 17 years in which Jeff Sillvestre works in the area of flirtation. Over these nearly two decades, the professional has approached classic drinks, which are the great inspiration of his creations and which cross generations, cultures and historical moments.

On São Paulo capital, the professional accumulates time at well-known houses, such as Piracás, in Perdizes, and Axado Bar, in Vila Madalena.

Today, Sillvestre is behind the bar at the Stella, a contemporary Brazilian cuisine restaurant dentro do Canopy by Hilton, hotel nos Jardins opened in early 2021.

There, Brazilianness is not restricted to the dishes of the chef David Kasparian: house cocktails highlight ingredients from the Brazilian biomes, such as Amazon on Fire, with cachaça, cocoa bitter and açaí reduction, with a complex flavor and finished with tapioca flour “which recalls the way açaí is eaten in the north”, explains Jeff .

The drink Tucupi is a New Blood is another example, which includes gin, tucupi, jambu chilli, tajin pepper and jambu flower tincture. But his favorite drinks? Hanky ​​Panky and Old Fashioned – more classic, impossible!

Vigga Bar

The signature cocktails of Vigga are amazing, made by the hands of bartender Gui Ferrari. Some examples: there is the Sotaque, which includes aperol with roasted peppers, biquinho pepper, coriander, cachaça, whiskey and orange bitter, as well as Adoniran, with campari with beetroot, dry vermouth, rum and malic acid.

Santana Bar

O Santana is the bar of the award-winning Gabriel Santana. It is a cozy, hospitable place that has wonderful cocktails. One of those places where you can order any drink you won’t regret.
