Where do bartenders drink? With Laura Paravato, from Maria e o Boi, in RJ

Until then a history student at the Federal University of Rio de Janeiro (UFRJ) and body piercer, Laura Paravato She started working in cocktails in 2015 with the intention of saving money to go backpacking around Latin America. What she didn’t expect was to fall in love with the world of bars and change careers to dedicate herself to cocktail making.

After specializing, he worked and provided consultancy in several renowned companies, such as Mee Restaurant , Our Ipanema , Maguje , Scale , Void Group (RJ, SP and Porto Alegre), Brota Restaurant and the Dainer to name a few.

With a focus on classic cocktails, using modern techniques and natural and Brazilian ingredients, Laura is currently responsible for the management and bar management of Grupo Pabu, which includes the Rio de Janeiro restaurant Mary and the Ox listed among the Bib Gourmand houses of the Michelin Guide. In the group, she signs the letters alongside Christian Lanna .

  • Liz Cocktails & Co.

In Leblon, Liz is an excellent bar for both classic drinks and bold new versions. It’s my favorite place to have a dry martini after work.

My suggestion is to not stick to the menu and order exclusive cocktails or foolproof classics straight from the bar.

  • Suru Bar

Suru is an almost obligatory stop on my way back home, which is located in the center of Rio. The bar has a welcoming popular aesthetic and is run by two great friends who I am a professional fan of, Igor Renovato It is Rai Mendes .

I always make the same choices: I order a stupidly cold beer or give in to Zé, a signature drink with aged cachaça, Cynar, honey, lemon and mint.

  • Babbo Osteria

I’m a pasta lover, so I’m sure I’ll go wherever there’s good food and drink. This is the case at Babbo Osteria, run by chef Elia Schramm and located in a beautiful mansion in Ipanema.

The bar is wonderfully orchestrated by Paula Diniz. On the menu, I really like the Negroni Bianco, which contains gin, artisanal gentian liqueur, Bianco vermouth, lavender and orange bitters. It deserves to be immortalized so much that it remains on the menu even after changes.

In Botafogo, Calica is another bar owned by a bartender friend, Andy Tavares who is now also a businessman. For me, the bar serves as a refuge in the early hours of the morning, as it hides an arcade machine on the second floor.

From the 600ml beer to the signature cocktails, Calica has a relaxed atmosphere that makes me come back several times a week.

  • Ella Pizzeria

Bloody Mary from Ella Pizzaria, in Rio

When I want to escape the hustle and bustle, I go to Ella Pizzaria, right next to the Botanical Garden. In winter, I love the mirrored environment that reflects the fire from the pizza oven.

With this view, there’s nothing better than warming your soul with a good chat and good cocktails from the hands of Luana Greco who already knows my tastes and is always surgical in her suggestions when I ask “what am I going to drink today?”.
