Marlon Silva He began his professional life with the desire to work in the kitchen, but, by an ironic twist of fate, as soon as he began his journey in gastronomy he was called to work alongside Spencer Amereno. There, he began his career as a bartender, an area he has been working in for over 10 years, leading places listed among the best in the world, such as Frank Bar and Guilhotina.
He headed the bars at Makoto restaurants, where he implemented the drinks menu, and BalaioIMS. As a consultant, he worked at Benedita Noronha, Vila Anália and Hilton by Canopy. At the end of 2023, he opened the Drunks a high-end cocktail bar located on the mezzanine of the Osso São Paulo in partnership with Guilherme Mora and Cassiano Oliveira.

Rumor has the duo Spencer Amereno It is Cristiana Negreiros in front of the counters; he as bar supervisor and she as head bartender at the restaurant in Itaim Bibi.
The drink I like most is the Japanese Tiki, which is a reinterpretation of a Tiki with all the Japanese minimalism. It contains shochu, jabuticaba liqueur, pineapple, Jataí honey, Tahiti lemon and milk. It's fruity and delicate and my current favorite cocktail.

The bar at Imakay, an Asian restaurant with a modern feel in Itaim, is run by Kevin Cavalcante which takes inspiration from Japanese cocktails for the menu.
Of the options, I love the Sayuri Cocktail, a drink that really values Japanese ingredients and uses a not-so-exploited fruit, pomegranate. In addition to it, the cocktail is made with awamori, Tahiti lemon and lemon leaf.

Caledônia has an impressive collection of whiskeys and has a head bartender Alison Oliveira .
From the menu, I recommend the Dry Martini, which is made here with Martin Miller, one of the best gins in the world in my opinion. It has a touch of vermouth that brings balance to Dry Martini lovers, like me.

With a menu of Japanese haute cuisine, Ken Zushi also excels in cocktails. Douglas Morinaga serves incredible sushi and sashimi in an unpretentious, cozy place off the beaten path of restaurants. There, they also make the best Tom Collins ever!
