One of the most celebrated bartenders in the national cocktail industry, Spencer Amereno Jr . has been operating in the São Paulo scene for more than two decades. An admirer of Japanese cocktails and oriental techniques in the area, his work garners praise.
To begin with, he was successful through his five-year stint in the Frank Bar in the lobby of Maksoud Plaza , hotel that closed in December last year. There, he made fate into one of the most popular cocktails in São Paulo, even appearing on the list of the best in the world.
The bartender then left Frank Bar in August 2020 and took to the cauli , an address in Pinheiros known for its food, photogenic drinks and funky atmosphere. In March of last year it was time to call the Guillotine Bar From home.
Since then, he has been head bartender at the bar in Pinheiros, which has already ranked 15th among 50 best bars in the world in the 2019 edition of The 50 Best.

The Punch Bar
O The Punch it’s a high-end Japanese cocktail bar – which attracts me a lot as I’m a big fan of this school. It’s a footprint bar speakeasythose that border on secrecy and leave an air of mystery.
Inside there is a refined bar, with a wooden bar and various drinks on the shelves. Cocktails based on yuzu, the Japanese citrus, are well made here. It is worth mentioning that the service is made with reservations only.

Riviera Bar
At the end of Avenida Paulista, at the intersection with Consolação, is the rivieraa traditional bar in the city that was born in 1949. I say that being here is like taking a trip back in time.
In addition, I have a fondness for the place, as I was responsible for making three variations of Negroni for the current card. It is always an ideal stop for good drinks, as it is open 24 hours a day.

Santana Bar
At the Santanacreative and exclusive bar in Pinheiros, we can feel the affection for every detail that partner and bartender Gabriel Santana puts in this place.
In the small house, which has few tables and a deck, cocktails are prepared with precision. My highlight goes to both the classics menu and the interesting authorial options.

Cauli Dinner Bar
I have a lot of appreciation for the brigade of the caulihouse in Pinheiros where I was once part of the team.
In addition to everyone being very hospitable to me, the food is very good and the atmosphere mixes a nightclub with a cocktail bar. Here, in addition to being very well made, the drinks are highly photogenic.

Mapu Restaurant
I highlight the mapu in my choices because I really admire the work of Maurício Barbosa, responsible for the bar.
In addition to serving delicious Taiwanese food at Vila Mariana, the house has a drinks menu that includes classic options and interesting signature drinks with Taiwanese touches. An example is the milkfish (R$28), which includes spiced rum, orange liqueur, Falernum, assam tea, apple, lemon and milk.
