Where do chefs eat? Elia Schramm, from Babbo Osteria, tells her favorite places in Lisbon

Born in Switzerland and based in Rio de Janeiro, Elia Schramm carries a fluminense accent together in a cheerful and relaxed way. Now 40 years old, it was at 22 that he left for London to pursue new goals.

In the English capital, Elia came into contact with a professional kitchen and soon wanted to turn her hobby into a profession. Back in the Marvelous City, he studied gastronomy and managed kitchens such as Terezè and Le Pré Catelan. At 27, he took off for Paris and entered the kitchens of the starred Le Taillevent and Le Violon d’Ingres.

In Brazil again, he commanded for two years the Laguiole , where he won a Michelin star with original recipes from French cuisine. In recent years, before opening his own restaurant, he was in charge of the kitchens of Grupo 14Zero3, in which he took care of seven houses at the same time, ranging from Greek to French cuisine.

In October 2021, home ownership came: the Babbo Osteria an already popular Italian house in Ipanema, which, with its affective recipes and cozy decor, takes diners on an appetizing journey through the country of boots.

Last April, another venture: Elia inaugurated Scuola, which offers free professional training courses for the bar and restaurant market.

Pygmy

Pigmeu is a tip from Rubens Catarina, executive chef of Grupo DOM The restaurant is located in the Campo do Ourique region and we are received there by chef Miguel Peres, a great host.

The small house has good organic wines and serves simple and rustic food that favors pork, with products of the highest quality. Vegetables and offal also gain prominence.

Sea Me – modern fishmonger

Located in the Time Out Market, a gastronomic market with more than 20 restaurants, bars and commercial spaces in Cais de Sodré, the stop at Sea Me is an unmissable program, as everything is delicious.

It is said that Sea Me is like a mix between a modern snack bar and a traditional seafood restaurant. My tip here is the cod and sardine niguiri duo. Sardine torching is absurd.

It is worth mentioning that there is also a unit in the heart of Chiado.

Magnolia Bistrot & Winebar

In Praça das Flores, the Magnolia is from the Brazilian Camila Martins who has lived in Portugal for at least the last five years.

The place, opened last year and named after a flower found nearby, works as a mixture of café, bistro and super charming wine bar. The climate is very pleasant, the list is natural wines and the food is cozy.

Cantinho do Avillez

Chef behind a handful of houses in Lisbon, José Avillez it is also the name of the two Michelin stars Belcanto . At Cantinho do Avillez, which has two units in Lisbon, in Chiado and Parque das Nações, the focus is on a relaxed atmosphere combined with contemporary Portuguese cuisine.

From the menu, I really like a dessert called “Três avelã”: it is a crumble with ice cream and hazelnut whipped cream with fleur de sel. It’s insanity! I even asked for a repeat.

Manteigaria – Pastéis de nata factory

Manteigaria is nothing new, but I did a trip to custard tarts and custard tarts and I can say that none of them can challenge Manteigaria’s position as the best custard tart in the world.
