Where do chefs eat? With Alexandre Vorpagel, from Bottega 21 and Casa Europa

Despite being a gaucho by birth, the chef Alexandre Vorpagel it is called by the most intimate of German. With businesses established in São Paulo, he is currently a chef and partner at Bottega 21 , Italian bar in Pinheiros .

His first contact with pans, however, began in Curitiba, where he took a technical course in Gastronomy at Senac. After graduating from Faculdade Hotec in São Paulo, he moved definitively to São Paulo in 2007 and began his journey through a series of houses.

Magari Ristorante, Le Marais Bistrot, Due Cuochi and Rive Gauche were some of the chef’s works. In 2013, he joined the Adega Santiago group, where he reached the position of executive chef.

Today, in addition to Bottega 21, the professional also shares his talents in house Europe in Jardim Paulista.

Outside of his business, the chef tries out other flavors around the city and shares a love of pasta, meat and traditional Japanese cuisine. Next, Alexandre shares his favorite addresses in São Paulo :

It’s a hidden place in the Vila Madalena region that I really like. Roberto Satoru commands the restaurant’s kitchen and is an attraction in itself.

In the house, fish and seafood are always featured. Icon has a reliable menu and I consider it a different place.

The Pasquim Bar and Prose

The atmosphere at Pasquim is lively with live music every day and its beers and draft beer are always very cold. It is a good place to enjoy with friends and family.

I like the house-made feijoada served on Wednesdays, Saturdays and Sundays (R$89.90 for two people). I say it’s a traditional recipe that’s well made and without fuss, which accompanies rice, cabbage, orange slices, crackling and banana.

NB Steak

When it comes to barbecue, NB Steak is my favorite place. The meats are top-notch and the cuts are differentiated. From the menu, my highlight goes to the Steak NB cut. The tasting menu (rodízio) costs R$198, with drinks and desserts aside.

The service is impeccable and the beer with the house brand is very good, an American Blonde Ale of its own (R$ 27).

Kubo Zushi

Kubo Zushi features traditional Japanese cuisine. I like to stay at the counter at the house in Vila Madalena.

The fish are of the highest level and there is always a wide variety of them. My tip for lunch is to choose the bentos (between R$45 and R$85; it comes with missoshiro). I also highlight the service, which is excellent.

Bocada’s makes the pizza I like the most and I recommend it in town. The dough of the individual Neapolitan-inspired rounds is perfect and delicious.

There are four pieces of high edge and thin dough. Among the choices, I recommend the Margherita (R$44 with beef mozzarella; R$48 with buffalo mozzarella).

The business in Barra Funda (which now also has a unit in Vila Madalena) has a different and very lively atmosphere.
