Where do chefs eat? With Carol Panarotte, in Recife

Born in São Paulo, Carol Panarotte entered the world of gastronomy abroad: it was during an exchange program in Dublin, the capital of Ireland, that he started working in coffee shops to support himself.

He worked for five years as the manager of a network of cafes with units in Ireland, Northern Ireland and England, and then he went deeper into courses in the field of gastronomy.

Back on Brazilian soil, he disembarked in João Pessoa, where he passed by a series of houses, such as Louro e Canela Art Gallery ; The Roccia kitchen from the chef Onildo Rocha; O Mezzanine Restaurant ; and even had its own coffee shop, called The Pie and the Right .

Around the country, Carol still accumulates passages through pig’s house , tuju It is Nui 360 the latter signed by Eric Jacquin . Today, the professional is ahead of restaurants in the BA’RA Hotel in João Pessoa, opened last year facing the seafront of the capital of Paraíba – in all there are two restaurants, one that values organic products and another on the rooftop.

Despite settling in João Pessoa, Carol also has a fondness for Recife, in which, below, she shares her favorite places to eat and drink well in the city of Pernambuco:

Quina do Futuro Japanese Tavern

Quina do Futuro, in the neighborhood of Aflitos, in the north of Recife, is where I fulfill myself: the menu is signed by the chef Andre Saburo which works with export tuna, the kihada maguro tuna.

Tuna has a “what” of a delicate flavor, sweeter and smoother in the mouth. I mean, it’s unique.

Quina do Futuro Japanese Tavern: Rua Xavier Marques, 134 – Aflitos, Recife – PE / Phone: (81) 3242-2553 / Opening hours: lunch from Monday to Friday from 11:30 am to 3:00 pm and Saturday from 12:00 pm to 3:30 pm; dinner from Monday to Thursday from 18:00 to 23:00 and Friday and Saturday from 18:00 to 00:00.

arvo

I recommend Arvo, the chef’s restaurant Pedro Godoy, because I simply love everything he cooks, especially when I want to end up in octopus – there’s everything from octopus vinaigrette, octopus in white wine and octopus rice.

The drinks are also sensational and I feel at home when I’m stepping foot in that beautiful “backyard”.

Arvo Restaurant : Rua Djalma Farias, 170 – Torreão, Recife – PE / Opening hours: lunch from Tuesday to Sunday from 11:45 am to 4 pm; dinner from Tuesday to Saturday from 19:00 to 00:00.

Ca-Já Restaurant

When I’m in the mood for a more homemade and well-prepared meal, I head to the chef’s Ca-Já Yuri Machado .

He’s a hands-on cook. Just thinking about it already makes me want to eat your food full of affection.

Ca-Já Restaurant : Rua Carneiro Viléla, 648 – Aflitos, Recife – PE / Tel.: (81) 3126-0648 / Opening hours: Tuesday to Thursday from 12h to 15h30 and from 19h to 23h; Friday and Saturday from 12h to 16h and from 19h to 23h; Sunday from 12:00 to 16:00.

Burgogui Restaurant

Following the line of traditional food, I love going to Burgogui, a Korean restaurant in the Casa Forte region.

I go to the restaurant with my family, as my daughters are crazy about Korean culture and we feel happy in the house.

From the menu, we ate a little of everything, from gyozas to Korean barbecue, such as beef burgogi – which we can assemble in the palm of our hand to wrap with lettuce.

Burgogui restaurant : Rua Jader Andrade, 168 – Casa Forte, Recife – PE / Tel.: (81) 99919-1789 and (81) 3204-1833/ Opening hours: Tuesday to Friday from 12h to 15h and from 18h30 to 10 pm; Saturday from 12:00 to 15:00 and from 18:30 to 22:00; Sunday from 11:30 am to 3:00 pm.
