Where do chefs eat? With Cassiano Oliveira, from Guillotina and Carrasco Bar, in São Paulo

Cassiano Oliveira started in the kitchen in the hotel business where he worked for about 5 years, until he decided to venture into street restaurants and, in 2018, he headed his first international restaurant, opening the production of the Makoto restaurant in Brazil.

During the lockdown period, the chef had the opportunity to work in the home of one of the forerunners of European gastronomy in Brazil, Pascal Valero who has already headed Michelin restaurants in France and inaugurated the kitchens of the Hyatt and Palácio Tangará hotels in Brazil.

For Cassiano, chef Pascal was a watershed in his deepening of gastronomic techniques. In 2021, he was invited by partners Rafael Berçot and Marcello Nazareth to build a new menu for the award-winning guillotine bar (50best bars 2019), which remains under his command. In addition to Guillotina, today he also signs the menu of Executioner Bar a speakyeasy of the group that has a gastronomic proposal designed to accompany the high-quality cocktails of Spencer Amereno Jr.

Ken Zushi

When it comes to Japanese food it’s my favorite at the moment, it has a good combination of tradition and contemporary, I recommend the chef’s excellent Omakase Douglas Morinaga .

Oven

the chef’s house Fih Fernandes it was one of the first places I tried a pastrami sandwich and since then it’s been the go-to spot when I’m in the mood. It’s also worth asking for the pastrame coxinha, it’s surreal!

Lola Osteria

Tagliatelle nero with cacio and pepe sepia, an unusual combination of grilled squid with cacio and pepe sauce is my recommendation for anyone discover the house in brooklyn.

Rose’s Bar

Bauru, close to São Paulo, has become an interesting destination with the arrival of chef Moacir. I already know its three houses and my favorite is the pioneer: Bar da Rosa. The jerky carpaccio is a must.

Puddle

could not let one bib gourmand off the list. O Puddle brings a menu guided by the grill and commanded by the super chef Tuca Mezzomo, among the delights, the peach palm with lemon sauce and caviar is a dish that was made for the gods!
