Where do chefs eat? With Eduardo Ortiz and Luana Sabino, from Metzi, in São Paulo

She is a Brazilian who has passed through renowned houses in Sao Paulo, such as Arturito, Tuju and Petí. He is a native Mexican from Oaxaca with experience in local restaurants that bet on the country’s traditions.

More than just in love, though, the couple Luana Sabino and Eduardo Ortiz also found themselves in gastronomy and together they opened the Metzi a Mexican restaurant with Brazilian ingredients in the Pinheiros district of São Paulo.

The restaurant’s name is a tribute to the moon goddess, according to Aztec mythology, and the menu has traditional recipes, mainly Oaxacan ones, with ingredients from both countries. Wait for the guacamole, the cauliflower with tamarind chamoy and plantain, the octopus tostada and oaxaqueña tlayuda with ancho tasajo – which are already the house favorites.

Bar do Biu

In everything they set out to do, it turns out perfectly well. At the Bar do Biu, eat the best feijoada (between R$78 and R$88), the best baião de dois (between R$59 and R$130), in addition to the best PF in town.

The dishes range from more classic preparations to vegetarian variations and other delicious ingredients. We say that it is a very well made food. Even going to the restaurant every week, we couldn’t choose a favorite dish.

The freshness of the fish By Koji are from another world. We have never tasted mackerel as fresh as the one served by the chef Koji Yokomizo – the sashimi with five slices costs R$30.

Tonkotsu Barikote Ramen Maru

Ramen is serious business for us. We used to eat every week when we were in New York. But São Paulo also has its place: it’s in a small door on José Maria Lisboa street that you can find one of the best we’ve ever tasted.

Among the highlights is the original tonkotsu (R$ 43), a broth made from pork, seasoned with soy sauce, thin noodles, marinated egg, chives, sea mushrooms, ginger and pancetta. The karaage (R$30) and the weekly domburis are also good options.

So, we were sure that São Paulo had a very well made ramen, with a strong broth, when we found Tonkatsu on the recommendation of our friend Gerard Barberan .

Chicken

I, Luana, grew up in the north of São Paulo, a few streets away from Praça da Matriz. My father has always been that person who runs the kitchen well and knows how to pamper his daughters. And sometimes he would surprise us with a gift: the chicken drumstick with catupiry from the Chicken (R$ 7.90 a unit; R$ 49 for 10 appetizer units).

As a good Brazilian, I love a coxinha, and the one at the bar is a huge success. The house also serves a variety of beers that are the delight of drink lovers. I say that Frangó is like a childhood love I passed on to Eduardo.

Eduardo is the more carnivorous of the two of us: when he enters the Color it’s like a happy child. As for me, Luana, I’m not that into meat, but if I’m going to eat one, it has to be in Cór. The house in Alto de Pinheiros supervised by Renzo Garibaldi specializes in dry aging, which values ​​the product as it should be.

The maturation and the point of the meat are really very good. Ancho (R$114), wagyu (R$180), chorizo ​​(R$99) and dry-aged cuts, such as prime-rib and T-Bone, come from the kitchen. We liked the restaurant so much that we celebrated our birthdays there.
