Where do chefs eat? With Fabio Pasquale, from Le Blé Casa de Pães, in São Paulo

He was still a teenager Fabio Pasquale began to nurture a passion for cooking. During school holidays, the young man helped his parents with the chores of the family’s small restaurant. Soon, he had no choice: after three years in Rio Grande do Norte working as a zootechnician, passion spoke louder.

Some time later, he concluded his culinary school with a tapas bar project. Thus was born, about a decade ago, the Sancho Bar Y Tapas at Augusta Street in Sao Paulo.

Cook at his own restaurant, Pasquale began to feel the need to also make his own breads.

After looking into courses and studies, he came to Le Blé House of Breads, in December 2019. At the house on Rua da Consolação, another love emerged: charcuterie – today, most of Le Blé’s cold cuts and sausages are produced locally. According to Pasquale, the next step is precisely to combine knowledge and inaugurate a bakery, confectionery and delicatessen school.

Away from his work, the chef frequents other houses and tries different flavors in São Paulo, from Japanese restaurants to celebrated pizzerias. Next, check out the Fabio Pasquale’s favorite addresses in São Paulo :

Keito (Pub Kei)

It is currently where I go when I want to eat extremely fresh sushi and very well chosen fish. The variety of bluefin cuts is my favorite part of the menu at Keito.

I cannot fail to praise the preparations made with uni (urchin), an umami bomb and the freshness of the sea.

It is also worth trying the house version of tempura, extremely well executed. For more fancy days, it’s worth investing in the omakase (R$460), where the chef always surprises!

Fasano Restaurant

Fasano Tiramisu

I understand that the Fasano is a landmark in the gastronomy of São Paulo. I always go on special occasions when I want to celebrate something. I celebrated more than one birthday there with friends and family.

I really like ordering the gnocchi stuffed with ossobuco with white wine and herbs (R$170) and the always unmissable tiramisù (R$66). I think that for those who work in the business, visiting the restaurant is like witnessing a service class, always executed with precision.

The mastery in the room, including the wine service, and the subtlety of the service as a whole make me feel super comfortable to enjoy the moment and at the same time enjoy the food in peace.

Leggera Pizza Napoletana

As a scholar, pizza lover and professional, I put the legger as the right place to eat the round the way it has to be. André Guidon, partner and pizzaiolo, is a very dear friend and was my teacher in the first course that AVPN (Associazione Verace Pizza Napoletana) brought to Brazil.

He’s a master doing what he loves and it shows at the table, without a doubt. From the starter, it’s worth playing with the fried pizza (R$ 44, two units) and, later, don’t forget to try the margherita (R$ 48), which is perfect!

I don’t think it has a better execution in our country – and I also produce pizzas at Le Blé which, modesty aside, are very well made.

Tordesillas

Have a cachacinha savoring the delights made by chef Mara Salles at Tordesillas always brought me an image of Brazil that we should exalt in the kitchen.

At the house, it is really worth trying the wrong dumpling (R$ 29 to R$ 42), made only with cassava and artisanal cheese, which, like many culinary classics, came from a mistake. I also highlight the delicious shrimp bobó (R$95), with acaçá and dendê farofa.

Since the times when the restaurant was located in Bela Cintra, in a super charming house, it was my meeting point and that of friends to taste the very well-made dishes and revere the richness of Brazilian cuisine.

Rios House

This is a completely unbiased opinion, although I am very close friends with the couple chefs Giovanna Perrone and Rodrigo Aguiar. for me the Rios House now has the best-executed menu in town.

We were met with perfection from start to finish of the meal. They invest in the “simple”, but very well done, a type of cuisine that I consider one of the most challenging.

My favorite starter is the grilled squid with peanut emulsion (R$49). As a main dish, the big choice is the black pork rib (R$ 215, serves two people). The restaurant was recently reopened in Tatuapé, in the same neighborhood as the old Rios Restaurante, and is well worth a visit.
