Where do chefs eat? With Hiroya Takano, from Shin Suzuran, in Manaus

The day starts early for Hiroya Takano : the chef goes through the main Manaus markets looking for fresh vegetables, as well as keeping an eye out for fish from the region, which are later transformed into sashimi, sushi and tempura in the Shin Suzuran .

THE restaurant in the amazonian capital stands out for using Amazonian ingredients, such as fish and PANCs (non-conventional food plants), within the molds of Japanese cuisine.

Thus, it is there in the kitchen of the house that the peacock bass, for example, is transformed into sashimi, the water lily served as sunomono with lychee and the nettles are transformed into nettle tempura.

But this story starts back there: the chef’s father, Tatsuya Takano arrived in Brazil in 1960 and, after working in the fields, decided to open a restaurant dedicated to the cuisine of his homeland in 1978. It was then that the youngest helped to manage the house, and the work between knives and stoves gave him the knowledge to pass to pursue a career in gastronomy.

Among the chef’s recommendations where to eat well in manaus there are houses that bring Amazonian food to the table, as well as Portuguese recipes and bar food.

Check out the chef’s suggestions below. Hiroya Takano at capital of amazon:

caxiri

THE caxiri is one of the best known restaurants in Manaus – and also one of the best. the chef Deborah Shornik presents a well-made and tasty Amazonian cuisine, working with perfection with the PANCs.

From the kitchen of the house, which is right in front of the Amazonas Theater I suggest the tambaqui dumpling with bittersweet cupuaçu and arubé (R$ 36, seven units) as a starter, and tambaqui “supreme” (R$ 78) as the main, which is the premium cut of the fish loin with herb sauce, orange and chestnut zest, grilled pineapple and cassava stuffed with coalho cheese.

Rua 10 de Julho, 495 – Downtown, Manaus – AM. Tel.: (92) 98405-4769. Opening hours: Tuesday to Saturday from 11:30 am to 3 pm (lunch) and from 7 pm to 10 pm (dinner) / Reservations via Whatsapp / Delivery via iFood.

Alentejo Restaurant

THE Alentejo Restaurant serves very tasty and classic Portuguese cuisine, one of the best options in town. The home environment is elegant, with good tables to gather family and friends.

My suggestion is to order the cod on the tile (R$ 180 individual and R$ 295 for up to two people), with potatoes, garlic, olives and delicious fish steaks, in addition to side dishes such as broccoli pulled in garlic and onion. It’s a dish that comes bubbling to the table.

Rua Pará, 555 – Our Mrs. das Graças, Manaus – AM / Tel.: (92) 3233-7300 or 3234-0706 / Opening hours: Monday to Saturday from 7pm to 10pm; Friday, Saturday and Sunday from 12pm to 3pm.

Rusty Rock Gourmet

THE Rust it has plastic tables on the sidewalk and a relaxed bar atmosphere, and serves typical bar food – best accompanied by a cold beer.

The PF’s are good requests for the week. Here I suggest the house filezinho, which are fillets in strips with shoyu and shimeji, fried cabbage and ginger farofa. The steak on horseback and Oswaldo Aranha tongue are also successful. And detail: the beers come out “cracking” from the fridge with a thin layer of ice in the bottle.

Avenida Pedro Teixeira, 1000 – Dom Pedro, Manaus – AM /Tel.: (92) 99440-0402. Opening hours: Monday from 11 am to 3 pm; Tuesday to Saturday from 11 am to 10 pm / Delivery via iFood.

Amazon Zefinha

THE Zefinha is a restaurant that proposes to serve genuinely Amazonian food, and is located on the ground floor of the Mercure hotel in Manaus.

My recommendations for the restaurant are based on traditional fish from the Amazon region, such as the tambaqui sausage (R$ 37.90) as an appetizer, which comes with braised cariru, tucupi honey and comes with a pepper and lemon sauce.

For the main dish, I suggest the pirarucu Tornedos against the waters (R$ 64): the grilled Tornedos are flanked by açaí and pacovã banana purees, accompanied by white rice, murupi pepper sauce and olive oil.

Avenida Mário Ypiranga, 1000 – Adrianópolis, Manaus – AM / Tel.: (92) 99206-2384 or 3584-1488 / Opening hours: open every day from 11:30 am to 10 pm / Telephone reservations / Delivery via iFood.
