One of the chef’s childhood favorite places Martin Casilli it was her great-aunt’s kitchen. There, he was invited to taste new flavors and make great discoveries. One of them? Learning that the kids menus at restaurants had definitely not been created for him, who, at the age of 10, was already into shrimp and elaborate risottos.
The years passed and the passion for cooking was always on fire, but when choosing the profession, Martin decided to fulfill his father’s wishes and went into engineering. The kitchen, then, continued as a refuge from the tiring routine of everyday life, until the chance arose to go to the “Masterchef” program on TV Bandeirantes.
After the season on the show, Martin realized that there was no escape: his place was really between pots. In 2017, he fulfilled his dream of having his own restaurant by opening the Sky Hall Terrace Bar. And in 2021, the dream expanded with the opening of the Sky Hall Garden Bar. The houses bet on contemporary cuisine and a relaxed and lively atmosphere, which make you forget the madness of the capital of São Paulo.
And even amid the hectic routine of running two restaurants, a legacy lives on in the daily life of chef Martin Casilli: discovering new flavors, one of his favorite hobbies. And now he shares some of his favorite restaurants in the city of São Paulo.
Make Hummus Not War
For me, Fred and Talita Caffarena’s project brings the best of the Middle East since Firin Salonu – which is also theirs, but is on hold for now. At the Make Hummus Not War, they manage to serve a balanced meal at a great cost. It’s the best hommus in town and, among the dishes, my highlight is the hommus dolma, which features mini tomatoes stuffed with rice, nuts and spices. Simply divine. For now, it only works via delivery, but soon they will have a physical space.

the chef Tadashi Shirashi managed to take the – already very good – sushi served in the city of São Paulo to another level. At the omotebako, he serves a complete omakase, combining ancestral respect for techniques and unparalleled creativity for the elaboration of impeccable dishes. Try the chef’s shari, it’s the highest level I’ve ever had here.

Mica
Located on the chaotic Guaicuí street, in Pinheiros, the Mica it’s a mix of restaurant and bar and a haven for good meetings. The food and cocktails are executed with a lot of technique and in a very relaxed way. Tomato salad with marinated tofus is addictive while being as simple as it can be.

THE animus is commanded by Giovanna Grossi, which is among the names that I consider one of the great strengths of our country. Despite being young, she already has several achievements, such as being president of the Bocuse D’Or Brasil team. Around here we feel the lightness and dexterity that she and her team have. The roasted green beans and carrot cream dough are simply a must.

Bar Boca de Ouro
It is impossible to make this list without bringing the refuge of modern bohemia. I’m a customer of Mouth – as I affectionately call it – for at least 7 years and I always find refuge in the classics, such as peppered chard and the famous bolovo. THE Renato Martins it’s the Arnaldo Hirai continue with an incredible harmony, which is translated into their unique way of receiving all the buds of São Paulo’s nightlife.
